Da ihr ja nach mehr deutschen Rezepten gefragt habt kommt hier ein leckeres Karottenkuchen Rezept. Also eigentlich habe ich Karotten Fitness Bars daraus gemacht. Es ist wirklich so unglaublich lecker und köstlich geworden, dass ihr gar keine andere Wahl habt als es auszuprobieren! 🙂 

Backen mit Gemüse

Gerade im Herbst verwende ich sehr viel Gemüse um süße Nachspeisen zu machen. Zucchini, Süßkartoffel, Karotten und Kürbis geben den Gerichten einen ganz neuen lieblichen Geschmack. 
Hier muss man oft ein bisschen out of the box denken und einfach mal was neues probieren. Süßkartoffelbrownies sind zum Beispiel richtig lecker. Sollte ich auch mal ein Rezept dazu teilen. 🙂 Backt ihr manchmal mit Gemüse? Let me know in the comments!

Mein Karottenkuchen enthält weder Zucker, Butter noch Mehl. Also alle „bösen“ Zutaten wurden mit gesundheitsbewussteren Alternativen ausgetauscht.
Statt dem gewöhnlichen Weizenmehl verwende ich Nussmehl. Nussmehl hat viel weniger Kohlenhydrate. Natürlich dafür mehr Fett, aber auch mehr Protein. 
Die Butter habe ich durch Mandelbutter ersetzt. Auch hier habt ihr weitaus weniger Fett aber dafür eine extra Portion Protein dabei. 
Den Zucker habe ich durch meinen Küchenliebling Erythrit ersetzt. Erythrit ist ein natürlicher Zuckeralkohol und enthält keine Kalorien.

Raw & Vegan 

Bei diesem Karottenkuchen braucht ihr auch gar keine großen Kochkünste. Ihr mischt eigentlich alles nur in einer Schüssel zusammen und stellt es dann kalt. Das Rezept ist eigentlich auch vegan. Ich habe nur dieses Mal ein Protein verwendet welche auch etwas Molkeprotein zugesetzt hatte, was es dann nicht ganz vegan gemacht hat. Wenn ihr aber ein normales veganes Protein nehmt ist alles gut 🙂 

Ich war wirklich fasziniert von der Einfachheit aber auch dem Geschmack von diesem Karottenkuchen Riegeln. Es schmeckt einfach wie Weihnachten 🙂

Nachdem ich nun so davon geschwärmt habe kommt hier nun das Rezept:

  1. 1 Becher feines Hafermehl
  2. 1/2 Becher Kokosnussmehl
  3. 1/2 Becher Protein Pulver (Fit Vanilla)
  4. 2 EL Xylit oder Erythrit
  5. 1 TL Zimt
  6. 1 TL Lebkuchengewürzmischung
  7. 1/4 Becher Mandelbutter
  8. 1⁄2 Becher Dattelsirup
  9. 1/2 Becher fein geraspelte Karotten oder Karottenpüree 1 TL Milch
Frosting
  1. 1 Messlöffel Fit Vanilla Protein Pulver 1/4 Becher Frischkäse
  2. 1 EL Milch
Instructions
  1. In einer großen Schüssel Hafermehl, Proteinpulver, Xylit, Zimt, und die Gewürzmischung gut zusammen mischen.
  2. In einer mikrowellengeeigneten Schüssel die Nussbutter und das Dattelsirup vermischen und kurz erhitzen. Nun die flüßige Masse mit der trockenen vorsichtig vermischen. Nun noch die Karotten hinzufügen und vermengen bis eine feuchte, bröckelige Masse entsteht.
  3. In eine mit Klarsichtfolie beklebte Auflaufform geben und fest zum Boden und an den Rand drücken. Kühl stellen für mindestens 30 Minuten. Für das Frosting das Vanilleproteinpulver, den Esslöffel Milch und den weichen Frischkäse in einer Schüssel vermengen. Das Frosting über die kalten und geschnittenen Bars streichen und bei Bedarf mit etwas Zimt noch bestreuen.

  1. Ich habe die Masse als erstes zu Riegel geschnitten bevor ich das Frosting aufgetragen habe.

Alright guys we have to admit it. Summer is over. Bye, bye see you next year. Time to bring out those cosy socks, warm sweaters, cool leather jackets and nice boots for the colder season of the year. 

With this post I want to share one of my favorite fall recipes. You might not know this but I have a secret pumpkin obsession. During October and November almost every meal includes some kind of pumpkin. Also my breakfast. Since I absolutely looove this recipe I had to share it with you in a dedicated blog post. This pumpkin porridge is so creamy and warming. 

Spiced Pumpkin Porridge

Fitness Pumpkin Porridge Variations 

If you would like to add some extra protein this is the perfect opportunity to mix in an extra scoop of your favorite protein. I can recommend using vanilla, but chocolate is also super yummy! 
For vegan fitness versions of this pumpkin porridge I have used hemp protein and sunflower protein in the past and it was also super tasty. Only the hemp protein gave it a slightly different taste than it usually has. 

Pumpkin Porridge Toppings

Since this is a hearty and smooth fall composition I would recommend topping it with fall fruit like pears or apples.
I would also prefer slightly simmered apples or pears instead of raw ones. Like this the flavors evolve better and if you add some cinnamon and honey its just the perfect topping.
When I make it I usually use nut butter as well which adds so much extra delicious flavor to the pumpkin porridge . In the pictures you see peanut butter I put on top of the yummy bowl. I also really like cashew butter, but that didn’t came out so well on the picture 😉  
Another topping I can recommend are nuts. I used very special red nuts that my grandma has in her garden. But regular walnuts, pecans or almonds will do as well. 

Spiced Pumpkin Porridge

The ingredients

For this easy pumpkin porridge you will just need a handful of ingredients. 
It is super easy to make and will take you only 15 minutes. 
Regarding the type of pumpkin I only have made it with Hokaido. I like to use this kind of pumpkin because of the beautiful orange color. I am sure the other ones will work fine too. 
As I usually do I substituted regular refined sugar with Erythrit again to save quite a bit of calories. If you don’t have that at home you can use honey or regular sugar or Xylit.

  1. 100ml almond milk
  2. 20g oat flour
  3. 50g pumpkin puree
  4. 20g erythrit or xylit
  5. 1 tsp of pumpkin spice
  6. 1/2 scoop of protein powder
  7. nut butter
  8. apples or pears for topping
Instructions
  1. In a pot boil the oats in milk under consistent stirring.
  2. Once thickened add in the pumpkin purree, sweetener of choice, protein powder and pumpkin spice.
  3. Stir until well combined.
  4. Put in a bowl and top with nut butter of choice and apples or pears.
Notes
  1. Make double the portion if you are really hungry 😉

Healthy Crumble Recipe

Fall is just around the corner and its time to harvest all those delicious pears, apples, plums and blackberries. A perfect opportunity to make a healthy crumble for dessert! 

In this blogpost I will be sharing my favorite healthy crumble recipe with you, which I use all the time. It is packed with delicious protein and sweet fruit. Like all of my recipes it is super easy to make and doesn’t require a lot of cooking skills. 

Since I am going to Central America soon – Costa Rica and Panama – I am trying to get all my favorite fall recipes in before I leave since I am pretty sure I won’t find fresh pears, pumpkins and plums there. Plus it will be so hot over there that I will probably not feel like eating decadent fall food. Therefore I am currently eating a lot of pumpkin bread, pumpkin soup, pear cake, ect. I will be dedicating the next blogpost to my pumpkin addiction by the way. So many awesome recipes on the way soon guys!

Crumble Variations 

So, I will be sharing a basic recipe for the healthy crumble which you can alternate depending on your fruit wishes. You can make the same recipe with pears, cherries, blueberries, blackberries or plums. I have tried it with almost any kind of fruit. The only fruit that doesn’t really work are tropical fruits because of their acid which doesn’t get along with the dairy and strawberries because they have too much water.

Ingredients 

As always you will only need a handful of very basic ingredients. The recipe is divided into two parts. The crumble and the filling. 
In total you need 8 ingredients for the healthy crumble. Eggs, protein powder, greek yoghurt, Xylit, oats, peanut butter, cinnamon. 

We are replacing unhealthy sugar with Xylit and four that is filled with fast acting simple carbs with complex oats! Also, we are substituting the butter for peanut butter, which adds just like the whey extra protein to the healthy crumble recipe.

Instructions 

You simply mix the eggs, greek yoghurt and Xylit with each other for the filling. Now its up to you to decide which kind of fruit you want to use. Dice your apples, throw in the blueberries, pit  and add the cherries. 

Now lets make the crumble. For that you simply mix the oats with some water, peanut butter and cinnamon. 2/3 of the crumbles will serve as the crust and the rest will be sprinkles on top of the filling. 

Finally, put the crumble into the oven and let it bake for half an hour at 180 degrees. Best served still warm.

  1. 2 eggs
  2. 1 scoop whey protein
  3. 1 tsp baking powder
  4. 200g (7oz) greek yoghurt
  5. 3 tbsp Xylit
  6. Crumble
  7. 100g oats
  8. 2 tbsp peanut butter
  9. 2 tbsp Xylit
  10. 1 tsp cinnamon
  11. 40 ml water
Instructions
  1. Mix all the ingredients together for the filling. Cut fruit of choice (except berries) and add them to the mixture.
  2. Combine all ingredients for the crust and crumble until you get a crumbly texture.
  3. Press 2/3 of the crumbles into a little pie form.
  4. Add the filling on top.
  5. Sprinkle the rest of the crumbles on top of the filling.
  6. Bake for 30 minutes at 180 degrees.
Notes
  1. All type of fruit work except tropical fruit with a lot of acid and strawberry because of the high amount of water.

Caramel Protein Cheesecake – low carb and keto

Ready to taste the best protein cheesecake of your life?! With this blog post I am sharing my all time favorite recipe with you 🙂

My protein cheesecake consists of some very easy ingredients and gives you the full dessert indulgence you are looking for without adding those extra calories to your hips 😉 

I am literally making this protein cheesecake once a week because it is that good. The wonderful thing about it is that you only need a couple ingredients and it is so easy and fast to make. like most of my healthy recipes.

Macronutrients of the protein cheesecake 

First of all, I am sure you are wondering why this cake is so much better than regular cheesecake. Obviously since we are not using any sugar the taste will be a bit different than the unhealthy options you get to eat in restaurants, but the macro nutrients are sooo much better. 
A lot of people always think that in order to make fitness food you need to spend a lot of time in the kitchen and buy many expensive ingredients. That is not the case at all though, especially not with my recipes. They usually never take longer than 15 minutes and the end result will be tasty and good for you at the same time. 

Calories

Did you know that a regular New York Style Cheesecake has about 450kcal per slice? For some girls that could be a regular meal for them. If you go to the Cheesecake Factory and order yourself a Peanut Butter Fudge Ripple cheesecake you might end up eating up to 1100 kcal per slice. That is crazy right. I bet you are curious how many calories this healthy protein version of a cheesecake has now?! 
So this one will have only about 250kcal per slice depending on the exact ingredients you use. That is quite a difference right?! You can save almost half of the calories you would usually eat with a normal cheesecake. 

Protein

Let’s go back and compare our fitness protein cheesecake to a regular New York Style cheesecake regarding the amount of protein you will get per slice. Usually one slice only provides you with around 9 grams. However, due to adding protein powder this fitness cheesecake has up to 31 grams of protein per slice, depending on the whey you are using.

Protein Cheesecake Recipe

Alright after having told you how awesome this protein cheesecake is I hope you are totally ready to make it now. 
It is really so easy. All you need are basically two bowls. In the first one you mix all the ingredients for the filling and in the second one all the ingredients for the base.
Then you press the base into a pie form or silicon mold and pour the filling over it. After that it goes into the oven and you let it bake for about half an hour. Take it out and let it cool off completely. For the glaze you will be mixing more cream cheese with Xylit and simply cover the cheesecake with it. Finally melt some dark chocolate and sprinkle over the cake. In my recipe I used a sweetener called Yacon syrup for decoration as well, since it has the looks and subtle taste of liquid caramel. But that is not a must.

Low carb protein cheesecake variations

Certainly in this very specific example I made a caramel protein cheesecake. I used specifically caramel protein powder and Yacon syrup which is quite similar to caramel. However the base recipe always stays the same and you can substitute the flavors as you want. 

Here are some ideas for cheesecake variations: 

  • Strawberry protein cheesecake: You can use strawberry or vanilla whey for the filling. Use sugar-free jam to cover the surface of the cake and decorate with sliced strawberries. 
  • Peanut butter cheesecake: Add 2 tbsp of peanut butter to your filling and more peanut butter for the topping.

  1. 2 eggs
  2. 250g (8,8oz) greek yoghurt
  3. 250g (8.8oz) 
cream cheese
  4. 1 scoop protein powder
  5. 40g (1.4oz) xylit
  6. zest of one lemon
  7. Crust
  8. 80g (2.8oz) oats
  9. 1 tbsp coconut oil
  10. 2 tbsp water
  11. 1 tbsp xylit
  12. 2 tbsp peanut butter
  13. Dash of cinammon
Topping
  1. 100g (3.5oz) cream cheese
  2. 1 tbsp xylit
  3. 1 tsp lemon juice
For "caramel" cheesecake topping
  1. 1 tbsp Yacon syrup
  2. 2 tbsp melted dark chocolate
Instructions
  1. Mix all ingredients for the crust together and press into a pie form.
  2. In a blender mix all ingredients for the filling together and pour over the crust.
  3. Bake for 30 minutes at 180 degrees. Let the cake cool down completely.
  4. For the topping mix the cream cheese with the lemon juice and the sweetener. Spread over the cake.
Notes
  1. For a cheesecake variation you can use anything from blueberries to peanut butter and melted chocolate.

Life Update

On another note I thought to give you a short life update in this blog post. At the moment I am super busy planning everything for my big trip starting at the end of September. I will be going to Costa Rica, Panama and Mexico.
Alberto and I will be traveling through these countries, but working at the same time. It is the first time we are doing this and are simply so excited to try it out. It is so amazing when your work is that flexible and I really just need my camera, computer, phone and internet.

However, there is still so much travel preparation to do and I am getting more and more excited every day to finally leave and escape the cold and windy Austrian fall days. 
Also, I need to come up with a plan of how to take most of my food props with me on my travels. This will be quite the challenge, but we will see how it goes to take food pics somewhere else than at my studio at home.

Summer Barbecue Recipe

Celebrating Summer

What I love most about the summer is the wonderful barbecue season! It is so easy to eat healthy and not miss out on the tasty barbecue goods. You guys asked me to make more savory recipes, therefore I would like to share two of my new go-to low carb barbecue recipes with you. 

I discovered shrimps to be the ultimate hit regarding the perfect summer barbecue. So, I experimented a bit with different shrimp variations, also pairing it up with pineapple in my second recipe. 

May this summer celebrate slow, delicious, lazy days and simplified living. Let’s read long books, stay up late drinking wine with friends and stroll our local farmers markets, slowing life down enough to taste its sweetness. Here is to backyard bungalow get-togethers, shrimp barbecues, long sunsets, beach picnics and getting back to nature!

Summer Barbecue Bowl 

This bowl is a delicious compilation of my favorite summer food. Tomatoes and cucumber straight from the garden. Crispy sweet potato fries, tasty avocado  and protein packed shrimp! 

This is what you need for this unique salad bowl: 

  • 100g of shrimp
  • 100g of tomato
  • 1 cucumber
  • 50g of greek yoghurt 
  • 200g of sweet potato 
  • clove of garlic
  • 1/2 avocado 
  • salt & pepper
  • balsamic and olive oil 
  • rosemary, thyme, marjoram
  • 2 wooden skewers 

Method: Cut the sweet potato in rectangular fries and place in a bowl. Marinate with olive oil, salt, pepper, thyme, marjoram and rosemary. Put aside. Place the shrimp into another bowl and marinate the same way. Put the garlic clove into a press and mix with the greek yoghurt and some salt. Put aside. Put the the shrimp onto wooden skewers and place them together with the sweet potatoes on the barbecue grill. Wait until the have the typical barbecue pattern and are done. In a bowl spiralize the cucumber and marinate with olive oil, balsamic, salt & pepper. Put into a nice bowl and decorate with cocktail tomatoes, half an avocado (sprinkled with sesame or chia seeds). Now place some of the sweet potato fries and greek yoghurt mix on it. Finally top with two shrimp skewers and serve while still warm. 

Summer Barbecue Recipe

Pineapple Barbecue Shrimp Skewers

Okay I admit this is a crazy creation I very spontaneously made up when I had leftover pineapple sitting in my fridge. Usually I am not the biggest fan of combining sweet and sour taste into one dish, but this one is actually pretty great and I was surprised myself! 

Ingredients: 

  • 200g pineapple 
  • 100g shrimp 
  • 100ml water
  • 1 tbsp of honey 
  • pinch of salt 
  • 1 lemon 
  • some rosemary 
  • wooden skewers

Method: 

Cut the pineapple into nice rectangular pieces. Dissolve the honey with some water and at the juice of a lemon. Add a pinch of salt. Let the shrimp and pineapple soak in it for about 15 minutes. Take some wooden skewers and put alternating pineapple and shrimp on it.  Place skewers onto a barbecue grill until well done on both sides. Cut rosemary into small pieces and sprinkle over the skewers. Serve while still warm.

Leichte, flaumige Topfennockerl mit Erdbeersoße lassen die Herzen während der Erdbeerzeit höher schlagen. Dieses etwas leicht abgewandelte Rezept vom beliebten Klassiker ist reduziert in Kohlenhydraten dafür aber umso mehr reich an Protein.

Heute möchte ich mit euch mein absolutes Lieblingsrezept teilen! Meine low carb Fitness Topfennockerl!
Als Food Bloggerin wird man oft gefragt was denn sein Lieblingsgericht sei. Hier lautet meine Antwort immer: Topfennockerl mit Erdbeersoße. Ihr müsst wissen, dass ich einfach so ein Strawberry Addict bin. Gerade im Juni verbringe ich den Großteil meiner Zeit am Erdbeerfeld und der Name Carina Berry kommt auch nicht von ungefähr 😉

Meine Erdbeerliebe

Ich liebe Erdbeeren einfach weil sie so unglaublich gesund und gut für den Körper sind. Die kleine Frucht hat so viele Nährstoffe und Vitamine. Sie haben sogar mehr Vitamin C als Orangen. Da sie aus 90% Wasser bestehen sind sie auch super kalorienarm. Ich esse meistens fast ein halbes Kilo am Erdbeerfeld und das sind gerade mal 160kcal. Erdbeeren enthalten krebsvorbeugende sekundäre Pflanzenstoffe was sie auch zu einem super Krankheitsvorbeuger macht.

   Topfennockerl mit Erdbeersoße  

Wie normale Topfennockerl zu Fitnessnockerl werden

Okay wieder zurück zum Rezept. Also normalerweise werden Topfennockerl ja mit 20% Topfen, Brösel und Gries gemacht. 
Jedoch nicht bei mir. Ich konnte natürlich nicht anders und habe diese Zutaten durch bessere Alternativen ersetzt. Mit dem Magertopfen spart man einiges an Fett und Kalorien ein. Statt Brösel und Gries verwende ich Proteinpulver und Kokosmehl. Hier habt ihr einen erhöhten Proteingehalt und spart euch einiges an Kohlenhydraten. Zucker habe ich natürlich auch keinen verwendet. Stattdessen arbeite ich bei diesem Rezept mit Erythrit – ein natürlicher Zuckeralkohol. Falls ihr das nicht zu Hause habt, könnt ihr auch Xylit (Birkenzucker) nehmen. Der hat auch schon 40% weniger Kalorien als normaler Zucker. 

Topfennockerl mit Erdbeersoße

Auch die Erdbeersoße mache ich ganz natürlich. Oft wird hier ja nochmal extra Zucker dazugegeben. Ich mixen einfach nur die ganzen Erdbeeren und fertig. Die schmecken schon ganz natürlich einfach so wundervoll, da braucht man nicht noch extra Zucker. Übrigens mache ich dieses Rezept im Juli dann auch oft mit Himbeeren. Schmeckt genauso gut 🙂 

Topfennockerl mit Erdbeersoße

Die low carb Topfennockerl mit Erdbeersoße macht ihr am besten mit zwei Löffeln. Das Wasser muss hierfür unbedingt schon kochen und gebt nie mehr als 3-4 Nockerl gleichzeitig in den Kochtopf. Wenn sie oben schwimmen sind sie fertig. Wenn ihr sie länger kochen lässt werden sie etwas fester und größer.

Das diese Fitness Topfennockerl mein absolutes Lieblingsrezept sind, konnte ich es mir nicht nehmen lassen und hab es sogar für euch abgefilmt, damit wirklich nichts schief gehen kann und ihr ganz genau seht wie einfach und leicht es zu machen ist 🙂

Topfennockerl mit Erdbeersoße

Die besten Topfennockerl als Low Carb Version!

Zutaten

Nockerl

  • 500 g Magertopfen
  • 25 g Proteinpulver optional - alternativ Griess
  • 25 g Backprotein optional - wegglassen oder mehr Kokosmehl
  • 25 g Kokosmehl alternativ Griess
  • 25 g Xylit
  • 2 Eier

Brösel

  • 25 g Xylit
  • 25 g Proteinpulver
  • 25 g Kokosmehl

Soße

  • 250 g Erdbeeren

Anleitungen

  1. In einer Schüssel die trockenen Zutaten vermischen.
  2. In einer zweiten Schüssel Eier und Magertopfen fein rühren.
  3. Beide Massen zusammenmischen.
  4. In einer Pfanne Kokosmehl, Proteinpulver und Xylit mischen und kurz unter ständigem rühren goldbraun anbraten.
  5. Wasser in einem Topf aufkochen und mit zwei Löffeln kleine Nockerln formen.
  6. Nach circa 4-5 Minuten pro Nockerl abseihen und mit Bröseln bedecken.
  7. Erdbeeren mixen und als Soße mit den Nockerln servieren.

So many people have the misconception that protein food doesn’t taste good. I can promise you this recipe will make you think otherwise. I love it when I surprise myself with delicious creations like this one.

The fun thing about this recipe is that you simply put everything in a mug, stir and microwave it for a minute and voilà you have a delicious treat. 
I actually made this recipe for mothers day this May. I surprised her with breakfast in bed and this mug cake was the absolute highlight!

Ingredients

For this blueberry mug cake you need only a few basic ingredients. The only „special“ ingredient you need for this mug cake is coconut and almond flour. But in my opinion these two great flour substitutes should be part of every fitness kitchen anyways. 

Decoration

This mug cake by the way works with all kind of fruit. You can use strawberries, raspberries, peach, kiwi or mango to decorate it. For this special recipe I picked corn flowers from the field as they match the blue color of the blueberries perfectly. Flowers simply always pimp your recipe decoration. If you look very closely you can also see the little stars I cut out of bananas. If you have little cookie cutters that is a great way to add some eye-catcher effect.

  1. 1tbsp almond flour
  2. 1tbsp coconut flour
  3. 1egg (vegans can use chia egg)
  4. 20ml almond milk
  5. 15g protein powder
  6. 2tbsp greek yoghurt
  7. 2g baking powder
  8. Decoration
  9. 30g blueberries
  10. 15g almond butter
  11. 40g greek yoghurt
Instructions
  1. Mix all the ingredients for the mug cake together and put it in the microwave for 1.5 minutes. Put some more yoghurt on top and decorate with blueberries, almond butter and flowers.

Protein Pancakes – what a delicious way to start the day!

Skip the flour, sugar and butter and replace it with an extra dose of healthy protein. I use this recipe so many times for weekend brunches and birthday pancake morning surprises. No matter what the occasion these protein pancakes will always make an impression and will let you enjoy a guilt-free breakfast!

What most people don’t know that you can actually use whey protein powder for cooking and baking! I make the most wonderful recipes with it. You leave out the high calorie flour and replace it with protein powder. Perfect for protein pancakes! 

A little pancake making secret

Like most of my recipes it is very easy to make as you are basically just throwing things together in a bowl and blending it until you have a smooth dough. My one and only most important tip for you guys is to make SMALL pancakes! As the dough is simply not as strong and dense as a normal pancake dough you need to be more careful when flipping them. Making big pancakes will not work. The smaller the better 😉 I can also recommend using an empty ketchup bottle. Fill the dough inside the bottle and like this you can make perfectly round pancakes.

Choosing your toppings

Regarding topping you can use everything your hearth desires. I like to mix greek yoghurt with a bit more protein powder and top it with fresh berries. For the berry pancakes in this blogpost I also used sugar free strawberry jam and white almond butter for topping. This obviously adds extra calories, but also makes it extra tasty 😀

Ingredients
  1. 30g vanilla protein powder
  2. 1 large ripe banana
  3. ⅛ tsp. cinnamon
  4. ¼ tsp. baking powder
  5. 2 tsp. greek yoghurt
  6. 2 tsp. coconut flour
  7. 2 eggs
Topping
  1. 100g greek yoghurt 0%
  2. 20g whey protein
  3. sugarfree raspberry jam
  4. almond butter
Instructions
  1. Separate the eggs and fluff the egg whites.
  2. Blend the banana with the greek yoghurt and the egg yolks until smooth. Stir in the remaining ingredients. Now fold in the egg whites until well combined.
  3. Heat up a pan and fry little pancakes until golden brown.
  4. Mix the greek yoghurt for the topping with the protein powder and top the pancakes with it.
  5. Decorate with fresh berries, almond butter and sugar free raspberry jam.
Notes
  1. Make sure to make small pancakes. It is easier to flip them.

Easter Garden Cupcakes – healthy spring recipe!

The cutest Easter garden cupcakes you will see this spring! The highlight is definitely the turmeric white chocolate dipped strawberry that looks like a carrot on top of the Easter garden cupcakes. 

I tried to make this recipe as fitness approved as possible and expect some white chocolate that you will need to dip the strawberries in there is really nothing unhealthy about the delicious treats. So get ready for a guilt free Easter snack this year. 

Turmeric carrots

Ready to make your own healthy Easter garden cupcakes? Let’s start off by making the strawberries look like carrots. Since I didn’t want to use artificial food coloring I simply used turmeric powder to get a nice orange carrot color. Melt the white chocolate with a teaspoon of coconut oil and mix in another teaspoon of turmeric powder. Now simply dip the strawberries in the chocolate and place them on a cold plate and put them into the freezer for a couple minutes.

The Easter garden cupcakes 

The fitness cupcakes don’t contain any of the usual unhealthy ingredients like sugar, butter or four. I substituted the regular sugar for Xylit, the flour for coconut four and protein powder and the butter for organic coconut oil. The last things you need are 100ml of milk, some baking powder and cacao powder to give the cupcake the nice brown earth color. Simply mix everything together and bake at 180 degrees for about 20 min. Don’t fill your cupcake molds up all the way as the dough will rise quite a bit!

Once the cupcakes are baked make sure the let them cool off completely before going onto the next step.

The garden icing 

From the picture you might think I used Nutella for the icing. But also here I tried to substitute the unhealthy version for something better. I used a chocolate protein spread I found in the local fitness supplement store. If you don’t have chocolate protein spread at home – which I am guessing most people don’t you can make your own by mixing low fat cream cheese with cacao powder, Xylit and some melted dark chocolate. Or you simply take regular Nutella. I mean it’s Easter – we got to cheat a little bit sometimes 😉

Once you have your three parts we can start building the perfect Easter muffin. Spread the chocolate icing over the muffin and carefully place the dipped carrot strawberry over it. Now you can decorate the cupcake with a couple small flowers. It will make them look even prettier.

Garden Cupcakes
  1. 2 eggs
  2. 50g coconut flower
  3. 15g coconut oil
  4. 25g natural protein powder
  5. 30g Xylit or Erythrit
  6. 30g cacao powder
  7. 1tsp baking soda
  8. 100ml of milk
Garden Carrots
  1. 7 strawberries
  2. 1 tsp Kurkuma
  3. 70g white chocolate
  4. 1 tsp coconut oil
Garden Icing
  1. protein chocolate spread or Nutella
  2. flowers for decoration
Instructions
  1. Start by making the strawberries. Simply melt the white chocolate with the Kurkuma and 1 tsp of coconut oil. Dip the strawberries in the Kurkuma chocolate and put them into the freezer for 10 minutes.
  2. Now let's make the cupcakes. Mix all the other ingredients together and bake at 180 degrees for about half an hour. Let cool off completely before moving on.
  3. Last but not least put the protein spread or Nutella over the cupcake and place the strawberry on top of it. Decorate with some nice little spring flowers.
Notes
  1. Make sure the strawberries are really cold before touching them and also the cupcakes should not be warm before placing the strawberry on top of it. Otherwise the chocolate will melt!
