After two road trips through the Riviera Maya I would like to share my highlights here with you. It is such a magical and wonderful place to visit. In this blog post you will find the best Riviera Maya photo spots and travel tips to give you the best experience possible there. 

Each paragraph of the blog post talks about one of my travel highlights there always giving away the best photo spots in the end, so you can stay assured to leave with the best Instagram photos possible 😉 

Tulum

Tulum is a separate little world, nothing like you will have ever seen before. Away from the loud party city Cancun with its fancy hotels you will find a lot of eco tourism here. Everything has this very specific nature & hipster vibe. There are candles literally everywhere and each place looks like out of a fairy tale. They have a concept of creating true sustainability, thats why they take care of all the details from the materials of the constructions to the ingredients of the food prepared in the restaurants.

The main town of Tulum is basically just one main street with a couple of nice restaurants and bars. The real deal is the hotel zone. This is where you find all the well-known Instagram hotels and super hip food places. Make sure to visit my blog post on food in Tulum, where I am sharing all my favorite food spots.

Visiting the hotels at Tulum beach 

Here are some hotels you should go and check out for a unique experience. You don’t need to stay at them in order to have a look. We always pretended to want to eat something at the restaurant and walked right through. They are all super fancy and have amazing picture places. You definitely have to be a certain kind of person to stay at these places. Although every hotel offers extreme luxury and fancy cabanas you get this hippie eco vibe everywhere. We were interested and googled the prices of some hotels on the main hotel street of Tulum. Most start around 600 euros per night.

Photo spots:

Any of these hotel will offer some of the best Riviera Maya photo spots. The resorts are all beautifully designed and you will find something cool and new in every single one of them. 

  • Delek – is strongly focused around the concept of sustainability which is reflected in the construction style and the menu choices in the restaurant.They have a super nice beach are with big beach beds.  http://www.delektulum.com/
  • The Nest – is celebrating simplicity within its hotel and fits right in with the other eco hotels on the beach. The private villas and bungalows are all styled individually and the beach bed area looked so cosy. https://nesttulum.com/
  • Beach Tulum – I have only seen this one from outside, but it fascinated me with all the lights and candles. Would have checked it out from inside if there had been more time.
  • Azulik – no wifi, no electricity, the entire hotel is a piece of art. You can visit the restaurant and art gallery
  • Be Tulum – went through this hotel on the first hotel to get to the beach. They have a really nice pool we used for some photos. The beach bar also looked absolutely fantastic.

In Tulum you will also find old Maya ruins directly at the beach. The white old stones in contrast with the stunning clear blue water is a must see. Highly recommend you go early in the morning, as it can get super hot otherwise.

Cenotes

A must see at the Riviera Maya are the Cenotes. These are beautiful sinkholes, resulting from the collapse of limestone now exposing groundwater underneath. Back in the days most of them were sacred spaces for the Mayas. Their crystal clear water is breath taking. There are may different types, from open Cenotes to caves. We visited four different ones this time and one last year, each unique in their own way.

Cenotes are definitely included in my list of best Riviera Maya photo spots! Here are all the ones we went to:

  • Crsitallino: 30 pesos entry, beautiful open pool with a little cave for snorkeling
  • Cenote Azul: 120 pesos entry, open Cenote where you can jump from a little cliff
  • Gran Cenote: 180 pesos entry, most famous one, cute little turtles there and beautiful blue water 
  • Ik Kil: 5$ entry – go in the morning to avoid the tour buses, most impressive Cenote I have seen
  • Suytun: 70 pesos entry – go in the afternoon to avoid crowds. complete cave and super epic scenery

Chichen Itza

These old Maya ruins are one of the seven world wonders. They were constructed 600 years BC and are very well maintained. I have seen some Asztek ruins in Mexico City and the Maya ruins are quite different in the way they are built and the stones that were used. We enjoyed our time there a lot as it is simply fascinating to walk around and absorb the stories the buildings tell.

Right in front of the main pyramid you should take one of those hand holding looking back photos. Not sure if there is a specific name for that? It is a great shot though 🙂

Holbox – day trip to paradise

Holbox has to be on my list for best Riviera Maya photo spots. This is a magical little island we came to for one night. Drive to Chiquilá and take the ferry to the island. You can leave the car in one of the many supervised parking lots. We stayed in this super cute hostel where we slept in hammocks for the night. This was the budget version though and you can obviously find more comfortable accomodation on the island, but the hammocks were a once in a lifetime experience!
The water on Holbox is so blue it seems almost unreal. Punta Mosquitos and Punta Coco have the best beaches. Downtown Holbox is also perfect for a nice dinner. They have so many stunning restaurants and we couldn’t choose where to go first!

At Punta Mosquitos you find a beautiful beach with hammocks in the water reading the word “Holbox”. Each hammock pole has one letter. It looks so cool. Overlooking this beach you find a bar with a rooftop pool. I honestly have to admit I forgot the name, but when you are there you certainly will see it.

Cozumel – beach pictures!

Cozumel is an island right in front of Playa del Carmen. You will need to take a ferry which takes 30 minutes and is extremely nauseating. On the way there so many people will try to sell you stuff. They are all trying to rip you off by selling you cars for a day because they say taxi rides are crazy expensive on the island. Don’t do any of that. Just buy your ferry ticket at the main counter in front of the harbor (Fast Ferry). We paid around 10$ each way. Once you get there you can walk around downtown a bit and then take a taxi to one of the beaches. To Playa Azul where we have been to the last two times we paid 90 pesos in total, so really cheap. I have heard Palancar should be super nice, but I have never been there before.

Photo spot:  Cozumel is surely one of the best Riviera Maya photo spots simply because of the gorgeous beaches you will find there. What I love about Cozumel and especially Playa Azul is how crystal clear and blue the water is. Absolutely perfect for beach pictures.

Playa del Carmen – dinner in the city

This is a quite busy city and we always only passed through the main street close to the beach for dinner. It is bustling with people and you will find a lot of cool restaurant. We went to a place called 100% natural and were amazed by the healthy food choices and nice atmosphere. In the main street you will also find so many different ice cream shops. The best ice cream was at Aldo (Ferrero, Cookies and Kinder Bueno), but we also found spectacular ice cream in the shape of roses where every peddle would be a flavor of your choice. The place was called Amorino. 

Bacalar – the lagoon of seven colors

Certainly the most beautiful lagoon I have ever seen and one of the best Riviera Maya photo spots. The lake in Bacalar spreads out with its crystal clear blue water in different shades that give you the impression you are looking at the Caribbean ocean. I can recommend this awesome healthy place there called: Mango and Chile. Their protein smoothies are incredible. Bacalar is much more quiet than all the other places mentioned above. You still get much more of an authentic Mexican experience than anywhere else in the touristic areas.

After having been to Tulum two times and having sampled my way through all kinds of different restaurants, bars and healthy places I feel like I simply need to share my favorite food spots with you. Here you find a Tulum restaurant guide so you can have the best experience possible in this wonderful town! 

Why I love Tulum 

Tulum just has this incredible vibe you have to experience for yourself.  Everything in Tulum is so artsy and unique. All the hotels, restaurants and bars kind of follow the same style guide. You will find a lot of wood, candles and palm leaf roofs. Some hotels adapt a digital detox concept and don’t have wifi or electricity. They have a concept of creating true sustainability, thats why they take care of all the details from the materials of the constructions to the ingredients of the food prepared in the restaurants.

Tulum is a unique place and much different than any other part of Mexico. Forget the posh and shiny hotel resorts you find in Cancun and expect a more down to earth, eco nature vibe. This is also reflected by the cuisine you find there. Tulum is packed with raw and vegan cafes and fancy designer food. I had so much fun eating and sampling my way through the food places and will tell you about my favorite spots in my Tulum restaurant guide now.

Raw Love

Raw love is a super cute beach bar that will make your heart beat faster if you are even remotely interested in nice cream bowls. I had to include Raw love in my Tulum restaurant guide for its  incredible selection of superfood bowls that will convert any non vegan into a nice cream lover. They are served beautifully in coconut bowls and you can even add protein (vanilla, chocolate or hemp) to any of the yummy treats. Enjoy the bowls right by the beach and crystal clear blue water. They also have the option of turning your bowl into a smoothie for take away. What I loved is the idea of their Pharmacy shots, which are super high dosed superfood shots. Pure life elixir for your body.

Matcha Mama

Top Instagram food spot you need to go to when you are in Tulum. It is a must to take a photo with your healthy superfood smoothie on the cute white swings outside the little street stand. Even our short visit at Matcha Mama made me so happy because it is the perfect place to soak up these tropical beach vacation vibes. Fresh fruit everywhere around the shop, happy people and friendly staff. They even had wifi there which is perfect to upload that quick swing boomerang 😉
The drink menu is quite extensive and you can decide if you want either a smoothie or a bowl. I had the Mamacita smoothie which included matcha, almond milk, banana, mango and peanut butter. The smoothies are for Mexican standards pretty expensive, but definitely worth it! A smoothie is around 150 pesos (7$) and the bowls 200 pesos (10$). A definite highlight on my Tulum restaurant guide.

Ahau

Ahau is a hotel with a beach club and restaurant on the main hotel street in Tulum. After a morning workout in the jungle gym which is very close, we headed over to Ahau for breakfast. They have a generous menu of different breakfast choices ranging from Mexican to super healthy vegan food. I ordered the chocolate chia pudding in coconut milk with strawberries, banana, roasted almonds and cacao nibs. Alberto got the huevos rancheros, which is a very traditional Mexican breakfast dish and sooo delicious. They atmosphere is so chill and you have a direct view onto the beach. Certainly, my favorite breakfast location of this trip.

Gitano

This place is another world and on top of my Tulum restaurant guide list. I don’t think I have ever been to a more beautiful restaurant. We went for dinner and there were little lanterns, lights and candles everywhere. The atmosphere, style and setting was simply breath taking. The food was one of the best I had in Mexico and the waiters super nice. My Mexican room mate recommended me Gitano and we actually already wanted to go last year, but then a huge rain shower came and we stayed at home. So happy we went this time. They have such healthy options on the menu. We had sweet potato, hummus, asparagus, tuna carpaccio and pulled beef tacos. It’s not cheap for Mexican standards, but still absolutely affordable for us Europeans.

Burrito Amor

In Avenida Tulum you find the super cute Burrito Amor restaurant. It has a super laid back and chill atmosphere. We went there for lunch. The boys ordered burritos and us girls had a smoothie and a salad. Honestly I would not recommend the salad – it was super sour and small, but everything else was really good. The owners of Burrito Amor introduced a clean eating concept and thats why you will find a lot of healthy options on the menu. It is a great place if you are in or out of the city to grab a quick snack. Portions aren’t super big, but the atmosphere definitely has its charms and the vanilla bread is the best sweet bread I have ever tried. 

Nü Tulum 

’s goal is to make you discover the richness of the modern Mexican cuisine through flavorful and original recipes. We only walked by it several times and I admired its simplistic setting. It is quite pricy, but the dishes on their Insta and Homepage look super exquisit. NÜ is run by 7 talented Chefs and this restaurant was on top of my list. Unfortunately, not enough time to try them all. Therefore, I would highly recommend you going there and tell me if the food really was as delicious as I imagined it to be. Since we didn’t go there I also unfortunately don’t have a photo of this place. 

Batey 

This is a Tulum restaurant guide recommendation from the first time I visited Tulum. We went twice to this bar because we loved it so much. Batey has life music and each cocktail comes with a real sugar cane that you can nibble on. They also have this super cool old Volkswagen parked out side and spraypainted, as well as a sugar cane machine in the bar where they make fresh syrup. Again I really liked the setting an atmosphere there. It is in Tulum downtown so pretty far away from the beach & hotel area. Depending on where you stay you might need to catch a cab there. Was trying to find a picture I took last year, but unfortunately couldn’t find one – you simply have to trust me on this one 😉 

Last but not least – my little sad Taco al Pastor story

When I was in Tulum last year I fell in love with this super local Pastor place. We came back so many times because the super local tacos al pastor were so good. You can imagine how excited I was to go back there this year. Literally days before getting to Tulum I was dreaming of those Tacos. Well, long story short – we spend half an hour driving up and down Tulum main street trying to find the place. We were certain we still knew perfectly well where it was located. After a while and passing the same street multiple times we could make out the building of the Pastor place. Empty, deserted. We found out the had closed the place down. You have no idea how disappointed I was for the next 15 minutes. I had been looking forward to this place for week by then.  Sad story, but luckily still so much other amazing food around to make up for the loss. 😉

If I had to choose one place out of all the ones I mentioned about I would strongly urge you to go and have dinner at Gitano. It is one of the most magical restaurants I have ever been to. 

Regarding the best photo spots you need to take a picture at Matcha Mama on the cute swings. When you walk up that same street a bit in the direction of Tulum downtown you will find a sign that says „Follow that dream“ which is also perfect for photos. Besides that any of the stylish hotels offer plenty of photo spots (Be Tulum, Azulik, the Nest) and the Jungle Gym is also a great opportunity to get some workout photos.

Schokokuchen Upgrade gefällig? Mit diesem Rezept beeindruckt ihr jeden Partygast!
Der Schokokuchen mit versunkenen Birnen geht super schnell, schmeckt lecker und ist eine echte Augenweide beim Aufschneiden der Kuchenstücke. 

Weihnachten steht vor der Tür 

Es ist Ende November und ich habe heute beim Einkaufen das erste Weihnachtslied gehört. Ein guter Grund um gleich ein weihnachtliches Rezept mit euch zu teilen. Ich nenne diesen Schokokuchen „Comfort food“. Ehrlich zugegeben,  zählt dieses Rezept nicht zu meinen gesündesten aber bestimmt zu einen der leckersten! Ich habe zwar versucht den Großteil des Mehls mit Mandelmehl zu ersetzen und den Zucker mit Erythrit. Jedoch musste ich für die Konsistenz des Teiges bei diesem Rezept trotzdem Butter verwenden. Aber naja – Weihnachten steht vor der Tür und da darf man schon mal die eine oder andere Ausnahme machen 😉 
Übrigens super lustig hier in Mexiko schon solche Christmasvibes zu erleben. Es passt irgendwie gar nicht zu den Temperaturen. Ich bin ja normalerweise nur kaltes Weihnachten gewöhnt. In Cancun findet man zwar auch schon überall Schneemanndeko und blinkende Rentiere, aber weiße Weihnachten hat bestimmt noch kein Mexikaner hier erlebt. Wart ihr zu Weihnachten schon mal in einem warmen Land?

Jedes Stück ein Hingucker 

Was mich an diesem Kuchen so fasziniert sind die aufgeschnittenen Scheiben, die einfach so wahnsinnig cool aussehen. Die Birne wird beim Backen super weich und lässt sich mit einem scharfen Messer wie Butter schneiden. Dies gibt den Stücken einen super schönen, kreativen Effekt. Das Ganze sieht am ersten Blick nach einem komplizierten Rezept aus, ist aber in Wirklichkeit so einfach. 
Die Birnen werden nämlich einfach vor dem Backen in den rohen Teig gedrückt. Am coolsten sieht es aus wenn noch der Stiel der Birne aus dem Teig ragt.

Die Schoko macht den Kuchen 

Die richtige Schokolade gibt dem Kuchen erst das einzigartige Aroma. Ich habe aus diesem Grund die eigens ausgesuchte Labooko 72% Brasilien von Zotter für das Rezept verwendet.  Dies ist nämlich eine fruchtbetonte Schoki mit weihnachtlichen Noten von Lebkuchen, Trockenfrüchten und karamellisierten Mandeln. Passt also perfekt für den vorweihnachtlichen Birnenkuchen. 
Ich bin ja ein großer Fan der Zotter Schokoladen und war jetzt auch schon dreimal in Riegersburg in der Zottererlebniswelt. Dort habe ich mich durch das Schokosortiment durchgekostet und die Labooko 72% ist mir stark in Erinnerung geblieben. Ich liebe dunkle Schokolade und mit 72% hat sie gerade die richtige Bitternis für mich. Nicht zu süß und nicht zu bitter wie die ganz hochprozentigen Alternativen.

Ingredients
  1. 3 mittelgroße Birnen
  2. 150 g Labooko 72% Brasilien von Zotter
  3. 50 ml Inländerrum
  4. 110 g Butter
  5. 120 g Xylit oder Erythrit
  6. 4 Eier
  7. 100 g Mandelmehl
  8. 25 g Vollkornmehl
  9. 1 Teelöffel. Backpulver
Instructions
  1. Den Ofen auf 180 ° C vorheizen.
  2. Die Zotter Schokolade im Wasserbad langsam schmelzen und mit dem Rum glatt rühren. Beiseite stellen und auf Raumtemperatur abkühlen lassen. Nach und nach die Eier hinzufügen und alles gut mischen. Die noch flüßige Schokolade, Mandelmehl, Mehl und Backpulver hinzufügen.
  3. Wieder gut umrühren bis alles vermischt ist.
  4. Den Teig in eine längliche Brotform (am besten aus Silikon) gießen.
  5. Die Birnen mit etwas Abstand fest in den Teig drücken.
  6. Etwa 45 Minuten backen und auskühlen lassen.
  7. Bei Bedarf mit etwas Goldstaub bestreuen und die schönen Kuchenscheiben genießen.
Notes
  1. Den Kuchen erst schneiden sobald er ausgekühlt ist.

I have been a food blogger for over 3 years now. Today I can proudly say that I am Austrias biggest fitness food blogger and am grateful enough to be able to inspire thousands of people every day with my healthy recipes and active lifestyle. 
Since the beginning of this year I am doing it full time, having made my hobby into my dream job! Now in this blogpost I would like to share my knowledge with you to become a top food blogger as well! 

How to start a food blog successfully?

Below I will show you 10 hands on tips for stepping up your food blog game! Because of that, I will also link you products that I am personally using at home.

Food Blogging Top Tips for Instagram Growth

1. Find the right light

Taking a good picture will greatly depend on the light situation in the room. Hence, make sure to find a spot where you get good lighting. My tips: shoot with natural light, avoid straight sunlight and use a reflector. 

  • Natural light: I like to shoot at daytime. You get the worst photos when trying to shoot at night with your kitchen lights on. Oh and by the way – never use a flash for your photos. That is just straight up going to kill the photo! I usually place my food right next to a big window, so I get good light from one side. The best time to shoot when you have a slightly cloudy sky. This gives you nice diffuse light. 
  • Avoid sunlight: When you try to shoot under direct sunlight you will get a lot of very hard shadows in your photos. Also, the colors will come out in a very different way. When its sunny and you must shoot a photo I can recommend getting a diffuser. You can put that in front of your dish to shield it from the sunlight and get nice diffuse light. 
  • Use a reflector: I usually put a reflector on the other side of my dish, so light gets reflected back onto the dish. You can get a really cheap reflector on Amazon. This is the one I use daily at home. It really makes a huge difference, since you will get a brighter photo with less shadows! 

2. Find the right angle when shooting

What I learnt is that not every dish can be shot from the same angle. If you are shooting a nice smoothie bowl you most probably want to shoot it straight on and not from the side because you would loose a lot of that nice decoration on the bowl. 
However when taking a photo of a pancake tower you definitely want to shoot that from the side to see the stacked up pancakes. Therefore, don’t be shy to move around with your camera and try out different angles. 

3. Get social

How to become a food blogger on Instagram? Very simple – start by engaging with a ton of other people in your niche! After all Instagram is a social platform. When I started I spent hours commenting and liking other peoples posts. Giving is living! If you give a lot you will soon notice that you will get a lot of engagement back. 

But don’t just write mundane sentences like „nice pic“ or „looks awesome“. Thats so unpersonal. Read the captions and actually say something meaningful. Start real conversations. Moreover, make sure to watch and reply peoples Instastories. This is a great way to really get to know the people behind the accounts. 

4. DSLR cameras making top food bloggers 

What do top food bloggers have in common? They all shoot with a DSLR camera. You won’t hardly find a food blogger who doesn’t use a professional camera for their food photography. It simply makes a big difference. Phones can take really good pictures and are very practical for on the go. However, a DSLR camera simply differentiates the hobby bloggers from the professional ones. 

I personally use a Nikon D7500. In my opinion, it is a great camera also for beginners. Regarding lenses I can recommend using either a 35mm. 1.8 (thats the one I am using at the moment) or a 50mm 1.8. With these lenses you get a beautiful depth effect and can shoot pretty close to your image. 

5. Join a party 

If you are already highly engaged in the foodie niche you might have seen other food bloggers throwing a party and inviting everyone to join with a dish. Usually these parties have some kind of theme. I recently had an autumfoodparty and in the summer a summer closing party. Some people throw parties when they hit 10k, 20k, or something similar to celebrate the occasion.  You might wonder now why people do this. It is actually a huge advantage for the people throwing the party and those participating as both parties will grow their reach and get more exposure. 
When you enter the party you have to tag the person in the caption and the photo, like this your followers might become aware of the account and go follow. On the other hand if the big host account will feature your post, usually in stories and the winners on the feed, you will get a lot of exposure back. It is also a great way to start building a relationship with the bigger food influencers out there. 

6. Build a network

When starting out it is important to build your own network of people who will be supporting you on Instagram. These are going to be your loyal followers who will comment and like all your posts. This is what will determine also your engagement rate. Because of this make sure to find likeminded people that you can connect with. I suggest you find other food bloggers in the same niche who have about the same following size as you do in the beginning. Like this it will become easier to start a conversation and build a relationship. Once you have a good network you can start asking your other foodie friends for shoutouts on their stories. Mutual IG story shoutouts are a great way to grow and get more exposure for your account. 

7. Tag curation pages

When you post your content make sure to tag it correctly. There are hundreds of great curation pages out there that are looking for viral content daily to post on their galleries. Those pages can take your photo and repost it on their account, often reaching ten thousands of people giving you an incredible amount of exposure. If you manage to get reposted on a consistent basis by many big accounts I guarantee your account will grow immensely. 
What I like to do is to write those curation pages a personal message and asking them directly if they would be interested in sharing my piece of content. They are always looking for new talent and you might be the next big star on their profile <3 

8. Consistent posting schedule

Moving on to the next tip. Have a consistent posting schedule. I believe it is important to stick to a clear schedule regarding how many times a week you are posting. Like this your followers will know when and how often to expect your content. Don’t post nothing for a week and then throw out three pics in a row. This will seem super confusing to anyone following you. If you can’t manage to post every day then try to commit to every other day or at least four times a week. 

9. Food Styling

Next, lets talk about food styling. This is something I have neglected for the longest time. It is so powerful though! Because of this simple trick I was able to improve my food pics by a lot. Things like little flowers, tiny cookies, sprinkles, fruit and nicely cut veggies can make or break your dish. The most boring chia pudding can look absolutely fascinating with the right kind of decoration. A basic trick I use for so many of my dishes is cutting out little stars or hearts from bananas and place them on the bowl, cake or parfait. Makes it look so much better instantly. Therefore, I recommend you get yourself a couple of cute little cookie cutters and learn the art of decorating your dishes! These are the ones I use a lot for my recipes. 

10. Photo Setup  

Last but not least let’s look at food props. Back in the days I used to place my dish on a simple blanked on the floor. Looking back now this makes my laugh so hard. When wanting to take great food pics your photo setup is super important. In addition, you will want to make sure to have a nice background you can place your dish on. Something I can recommend is going to the local hardware store and asking them for samples of marble or wooden floor. I got all my backdrops for free just by asking them for a sample to take home. Worked really well! Furthermore, I can recommend using a nice loose fabric that you can put in the background to blur out your photo smoothly. 
Besides that you should acquire a nice collection of glasses, jars, spoons and plates to switch up your food photos. 

Bonus tip

Finally, I have an extra food blog tip for you. Nowadays it has gotten quite difficult with the new algorithm to grow a solid following. Building a strong audience is part of becoming a successful influencer. There is actually a very powerful organic growth tool for Instagram called Kicksta. The tool doesn’t spam, bring you fake followers or is a bot – it simply brings you pure organic growth through a highly developed artificial intelligence technology. You provide the tool with a couple accounts that have followers you would like to attract and then the tool will like a couple of photos of the followers from those target accounts under your name helping you to boost organic growth. Ich habe Rita letztes Jahr auf einem Event in Wien kennen gelernt. Wir haben uns bei einer Buchvorstellung zum ersten Mal getroffen und gleich super verstanden. Da Rita vor allem total köstliche Hauptspeisen zaubert und ich mich ja eher auf die süßen Gerichte fokussiere dachte ich mir es wäre doch toll heute einmal ein herzhaftes Gericht von ihr hier zu featuren. Aber Rita wird euch gleich selbst mehr davon erzählen.

Hey ihr Lieben, ich bin Rita!

Rita SchweigliIch freue mich total euch meinen Blog sowie eines meiner einfachsten und liebsten Rezepte vorzustellen. Wie oben schon erwähnt bin ich eher der herzhafte Typ, aber ein paar „sweet things“ findet ihr auch bei mir. Ihr werdet jedenfalls ganz viele vegetarische, vegane und auch einige glutenfreie Rezepte bei mir finden. Mein Foodcontent zeichnet sich durch die meist sehr einfache Handhabung aus. Ich versuche die Rezepte leicht zu gestalten, damit sie jeder nachkochen kann! 🙂

Zusätzlich gibt es inzwischen auch ein bisschen was zum Thema Lifestyle oder Travel, wie beispielsweise meinen kürzlich geschriebenen New York Beitrag.

Ofentomaten auf Pasta Rezept

Nun zu den Ofentomaten auf Pasta. Es ist ein super leckeres und einfaches Rezept. Die Ofentomaten schmecken so gut und sind in nicht mal 30 Minuten essfertig. Wenige Zutaten machen das Gericht so besonders, sie ergeben zusammen eine unglaubliche Gaumenfreude.

Zutaten für die Pasta:
• 250g Pasta
• 1EL Margarine
• 1TL Salz für die Ofentomaten
• 250g Tomaten (aller Art)
• 4EL Olivenöl
• 2 Knoblauchzehen
• Oregano, Basilikum, Rosmarin, Thymian
• ½TL Salz, Pfeffer & Chilipulver

Gebackene Ofentomaten auf Pasta_  
Anleitung
1. Zuallererst den Ofen auf 200 Grad vorheizen. Danach Wasser aufsetzen bis es kocht, die Nudeln und das Salz in den Topf geben und ca. 8-9 Minuten kochen lassen.
2. Inzwischen die Tomaten in Scheiben schneiden und auf das Backblech (mit Backpapier) legen. Danach mit einem Küchentuch leicht trocken tupfen. 3. Jetzt eine Schüssel mit dem Öl befüllen, den Knoblauch (mit einer Knoblauchpresse) rein pressen und danach die frisch gehackten Gewürze beimengen und gut vermischen. Ein Paar Basilikumblätter für’s Anrichten aufheben.
4. Die Tomaten mit dem würzigen Öl gleichmäßig bestreichen und für ca. 15-20 Minuten bei 200 Grad (Umluft) in den Ofen. Währendessen die Nudeln abgießen und mit der Margarine vermischen, damit die Tomaten dann noch besser auf den Nudeln haften.
5. Sobald die Ofentomaten fertig sind einfach auf der Pasta verteilen oder gleich pur genießen! Solltet ihr die frischen Kräuter nicht alle Zuhause haben könnt ihr natürlich auch zu einer italienischen Kräutermischung greifen.

Bei den Tomaten zu variieren macht übrigens sehr viel Sinn, da der Geschmack dann bei jeder einzelnen “Frucht” leicht anders ist. Ihr könnt auch probieren die Ofentomaten auf ein Brot zu geben, schmeckt auch super lecker!

Avocado cheesecake for dessert? Definitely something new to try, right? 
I promise you will love the creamy and smooth texture of the avocado. Lime zest and just add that extra tang that makes this dessert so interesting. 

Recipe Inspiration

I just recently came up with this dessert traveling through central America since we eat so many delicious avocados here. The other day we went to a local farmers market and bought three avocados. As luck had it they became ripe all at the same time and I had to find a way to quickly use as much avocado as possible. That’s by the way also how my stuffed avocado recipe came along. Yes – we were eating a lot of avocado that day 😀 Well anyways, so I had a bunch of limes laying around and I needed to make something green for my Instagram feed. Put those factors together and you get avocado cheesecake! All of a sudden it just made so much sense since the buttery avocado and zesty lime just go together so well.

This recipe is free from all the bad stuff you can imagine. My avocado cheese cake is a raw, dairy-free, gluten-free, refined sugar-free dessert. Say what? Yes its possible and you will see! What  I also really love about this avocado cheesecake is that it it is loaded with healthy fats. Avocado has a lot of unsaturated fats which are so good for your body! Since this is a no bake avocado cheesecake recipe you will preserve all the healthy vitamins inside the cake. 

Furthermore this cake is super low carb actually. My boyfriend is currently on a very strict diet, as he is training for the Mr.World competition in January. So all the recipes I am currently making need to be 100% clean. If you might remember my Instastory from that day – he ate half of the cake at once!

How to make it avocado cheesecake

Its is a really easy avocado cheesecake recipe as most of it comes together quickly in a blender or food processor. Its a no-bake cake so it also won’t take you a long time to make it. 
You will start by making the crust. Combine all ingredients and then press them onto the bottom of a silicon mold. After that you will be blending all the ingredients for the filling in a food processor and simply pour it over the crust. Next you will want to freeze your cake for 2 hours and its ready to be enjoyed. Yes, its as easy as that!

Decoration Tips

You might want to decorate your avocado cheesecake a bit. I sliced some limes and lemons and put them on the cake. It also looks super beautiful if you grate some lime zest and sprinkle that over your cake. Since kiwis also have a really nice green color I used them for decoration as well. If you have tiny little cookie cutters you can cut out stars or hearts from an avocado and place that on top of the cake as well.

A raw, dairy-free, gluten-free, refined sugar-free dessert.

Ingredients
  1. 2 large avocado (ripe)
  2. 1 tsp lime zest
  3. Juice of 2 limes
  4. 30g of Xylit or Erythrit or a couple Flavdrops
  5. 2 tbsp full fat coconut cream
Crust
  1. 100g fine oats
  2. 3 tbsp peanut butter
  3. 1 tbsp honey
  4. 1 tsp cinnamon
  5. 50 ml water
Instructions
  1. For the crust, mix all ingredients into a crumbly mixture.
  2. Press on the bottom of a small silicon mold.
  3. In a blender, finely puree all the ingredients for the filling.
  4. Fill the mass in the silicone mold and place in the freezer for 2 hours.
  5. Remove the frozen cake from the mold and decorate with lime slices, zest and kiwis.
Notes
  1. I made this recipe with a SMALL silicon mold. If you only have a big one I recommend you double to ingredients. You can also make the same recipe in little muffin molds.

Stuffed Avocado – Israeli Style

Stuffed Avocado Salad Israeli Style

Today I wanted to show you a healthy stuffed avocado recipe. Something savory for a change! 
Avocado is simply such a wonderful invention. There are so many different things to make with it. 

To start off this is actually a vegetarian stuffed avocado version. Now that I think of it, it is actually completely vegan! As I am writing this it is actually World Vegan Day. So what a perfect coincidence for such a healthy recipe. 

Stuffed Avocado Salad Israeli Style

My inspiration for this recipe

I got inspired for this recipe on my trip to Tel Aviv, Israel last year. We ate a lot of the famous typical salad there! Israeli salad is a chopped salad of finely diced tomato, onion, cucumber, and bell or chili peppers. It has been described as the „most well-known national dish of Israel“, and is a standard accompaniment to most Israeli meals. What I really love about this salad is the unique Cilantro taste. You will learn how to make it in a bit. It is super easy and inexpensive to make. 
Since I am here in Panama now and there are avocados around every corner I wanted to try this recipe with a slightly new twist. I know there are a lot of bakes stuffed avocado recipes, but I have tried baking them and honestly I am just not the biggest fan of it. So I came up with this salad dish thats perfect for a side of your lunch or dinner. 

Israeli Salad 

First we start by making the salad. You really just need a couple of very basic veggies. The only exotic ingredient you need – and that is a must for this recipe – is the Cilantro. Because of this it gives the salad this very specific aroma!

Next you take your veggies and chop them up super thin. Little cubes work best for the tomatoes and peppers. I used an orange and a yellow pepper because like this I got so many different colors for the salad. To be honest I am not sure why, but I somehow forgot to put the cucumber on the picture. Therefore, you will also need a cucumber!

Once you chopped up everything and have a nice rainbow of colors you can throw them all together into a big bowl and mix them up. After that it is time to season your salad. This is super simple, since the Cilantro will give it most of its taste. Finely chop up the Cilantro and mix under the veggies. Next take the juice of a lime and mix again well. Add salt and pepper and ready is your Israeli salad.

The rest is pretty simple. Take your avocado and carefully cut it in half. Take out the big seed. With a spoon take out a bit more of its flesh to fit more of the salad in there. Now fill it up with your Israeli salad and its all ready to be served. As simple as that 🙂 
Now I know you will be left with a lot more salad than you can fit into the avocado. They avocado really just serves as the eye catcher. You can always fill it up again with the remaining salad or just keep snacking out of the bowl!

Most importantly the recipe is really healthy. It is filled with so many important vitamins for you and on top of that totally low carb. This is even a keto stuffed avocado recipe! If you eat this with some chicken breast it is the perfect fitness meal. Just be careful with the avocado as it obviously does have a lot of fat. Healthy fat though 🙂

Ingredients
  1. 1/2 red pepper
  2. 1/2 orange pepper
  3. 1/2 cucumber
  4. 1 onion
  5. 1 big tomato
  6. 1 lime
  7. 1 avocado

Instructions
  1. Chop up all the veggies into little cubes.
  2. Mix together in a bowl.
  3. Squeeze the juice of one lime and add to the salad.
  4. Chop the Cilantro and add to the salad.
  5. Season with salt and pepper, mix well again.
  6. Cut the avocado in half and take out the seed.
  7. Fill the hole with the Israeli salad.
Notes
  1. You will be left with quite some salad, since you won't be able to stuff it all inside the avocado.

Could there be anything better than protein Rafaellos? I personally love those little coconut treats and that is why I wanted to create a super clean version of them. Let me share this delicious protein Rafaello recipe with you today and I am sure you will fall in love with it as well. It is low carb as well as keto approved!

The inspiration for this protein Rafaello recipe

This was actually one of the first fitness recipes I ever developed about 4 years ago. When I started to eat clean I was looking for clean ways to still satisfy my sweet tooth and thats when I came up with this delicious and incredible protein Rafaello recipe . 

It is super easy – as most of my recipes are – you only need a couple very basic ingredients. This means the recipe doesn’t require you to cook or bake anything. Literally anyone can do it within 15 minutes. 

The cute little protein balls are also perfect for decoration other dishes. Here some examples of my bowls and parfaits where I used them to really make the dish pop.

Other uses for the protein rafaellos

Once you have made the little cute and delicious protein rafaellos there are many different ways of including them in your recipes. This is a chia coconut overnight oats bowl. Heavenly right? Here is another creation of a coconut parfait I made with the cute little protein balls:

The perfect party snack 

Once you make these the first time I promise you you will fall in love with them. This protein Rafaello recipe is so genius I should actually get a price for it 😀 No seriously – if you are ever only going to make one of my recipes then make this one!  

I often make this protein Rafaello recipe when I have friends over. It is the perfect snack to put in the middle of the table for everyone. Usually most people cannot believe it is super healthy and doesn’t contain any sugar, butter or flour! 

One ball has only 1.9 net carbs, which is absolutely amazing. One protein Rafaello will have about 46kcal, which makes it a way better snack than a regular sugar cookie. You will be able to make about 15 pieces out of this recipe. Store them in the fridge for up to 3 days.

  1. 30g coconut or vanilla whey protein
  2. 250g low fat cream cheese
  3. 40g coconut flour
  4. 20g Xylit or Erythrit
  5. 20g coconut flakes
  6. 15 almonds for the filling
Instructions
  1. Take a big bowl and mix the whey protein with the cream cheese, coconut flour, sweetener of choice and half of the coconut flakes. You should get a sticky and quite stiff mixture.
  2. Take a small little bowl and pour the rest of the coconut flakes in it.
  3. Now with a spoon take a good amount of dough into your hands and roll into a little ball.
  4. Stick the almond in the middle and roll until smooth.
  5. Put the little protein ball into the coconut flakes and make sure to cover the entire ball with them.
Notes
  1. The protein balls will harden a bit if you put them into the freezer.

Feigenporridge mit AdeZ Amazing Almond

Wo sind meine Porridge Liebhaber? Heute möchte ich euch meinen super leckeren Feigenporridge zeigen, den ihr ganz leicht zu Hause nachmachen könnt. 

Bevor wir beginnen möchte ich euch erzählen wie ich zu diesem Rezept gekommen bin. 

AdeZ Blogger Brunch 

Anfang August hat AdeZ einen Blogger Brunch in einem Fitnessstudio organisiert. Hier lag der Fokus auf veganer Ernährung, Fitness und Nachhaltigkeit. 
Begonnen hat der Workshop mit einer Yogastunde. Danach gab es einen Ernährungsworkshop bei welchem wir die Einzelheiten einer pflanzenbasierten Ernährung uns angesehen haben. Zum Abschluss gab es dann noch ein Fingerfood Buffet und die leckeren Drinks von AdeZ. 

Welterschöpfungstag

Im Zuge des Ernährungsworkshops habe ich dann von dem Welterschöpfungstag erfahren. Dieser war am 1. August in diesem Jahr. Der Welterschöpfungstag markiert den Tag an welchem wir die Resourcen der Erde für das bestehende Jahr aufgebraucht haben. Also mehr als die Erde bis zum Ende des Jahres wieder nachproduzieren kann. Im Moment brauchen wir beinahe 1.7 Planeten. 

Das zu hören hat mich tief betroffen. Wir zerstören uns den Planeten selbst. Das Streben nach immer mehr wird uns irgendwann einholen. Ich habe dann auch erfahren, dass die Fleisch- und Milchproduktion einen großen Anteil an der schlechten Gesundheit unserer Erde hat. 

Ich dachte mir dann ich möchte hier einfach etwas unternehmen um das Datum nach hinten zu verschieben. #MOVETHEDAY

Wisst ihr, dass wenn wir den globalen Fleischkonsum allein um 50% reduzieren und diese Kalorien durch eine vegetarische Ernährung ersetzen würden, würden wir den Overshoot Day schon um ganze 5 Tage verschieben.

Deshalb habe ich mich dazu entschieden die Bewegung #VEGANMONDAYS ins Leben zu rufen

Seit August ernähre ich mich also jeden Montag vegan. Somit kann ich auch meinen, auch wenn nur kleinen Teil, für eine gesündere Erde beitragen. 
Ich habe dies auf meinem Instagram kommuniziert und mittlerweile nehmen jede Woche schon ganz viele meiner Follower an dem Movement teil und markieren mich in ihren Stories und Posts, in welchen sie mir ihre veganen Köstlichkeiten zeigen. 
Ganz vegan zu gehen ist für mich im Moment noch nicht vorstellbar, da ich Fleisch schon gerne esse. Jedoch habe ich mich fest entschlossen Fleisch- und Milchprodukte ab jetzt viel bewusster zu genießen und auch immer nach der Herkunft dieser Produkte zu fragen. 

Wenn ihr nun auch Lust bekommen habt, dann versucht doch auch einmal einen Tag vegan zu essen. Ihr werdet sehen, es ist gar nicht so schwer! 

Rezepte mit AdeZ

Aus dieser Motivation heraus ist nun auch dieser Feigenporridge entstanden. Es war mal wieder ein Montag und ich wollte trotzdem meinen leckeren Frühstückshaferbrei essen. 
Hier muss ich gestehen sind die alternativen Pflanzendrinks von AdeZ wirklich perfekt. Die Drinks sind nämlich komplett vegan, ohne zugesetzten Zucker, schmecken aber trotzdem durch das natürliche Stevia leicht süß! 

Was ich auch noch kurz herausheben möchte ist die Flasche in der die alternativen Pflanzendrinks kommen.  Ich stehe ja Plastikflaschen unglaublich kritisch gegenüber und setze im Moment alles daran meinen eigenen Plastikmüll so gut es geht zu reduzieren. Amazing Almond

Für den leckeren Feigenporridge habe ich  AdeZ Amazing Almond verwendet. Dieser Geschmack begeistert mich besonders. Ich liebe die süßliche Note der fein gemahlenen Mandeln und mag wie cremig dieser Drink ist. Außerdem, bin ich der Meinung, dass er sich deshalb so gut für süße Frühstücksrezepte eignet.

Zubereitung Feigenporridge

Zutaten:

150ml AdeZ Amazing Almond  
30g Hafermark
20g Xylit 
1 Brise Zimt
25 g veganes Proteinpulver (optional)
2 Feigen
1/2 Banane
15g Walnüsse
1 EL Maple oder Dattel Sirup
15g Frühstückgranola

Zubereitung:
In einem Topf den Hafer unter ständigem Rühren in dem AdeZ Drink aufkochen.
Xylit, Proteinpulver (optional) und Zimt hinzu geben. Umrühren, bis alles gut vermischt ist. Porridge in eine Schüssel füllen. Banane schneiden und auf den Porridge legen. Erdnussbutter über den Porridge geben und noch mit dem Granola, Maple Sirup, Feigen und Nüssen dekorieren.

Schlussendlich noch warm genießen und einfach schmecken lassen!

Overnight Oats with Carrots

Overnight oats – the perfect, easy and super quick breakfast recipe for a healthy start into the day! 

On-the-go breakfast 

What I love about these healthy overnight oats is that you can prepare them already the day before and simply need to take them out of the fridge the next morning and off you go. That is why this recipe is perfect for an on-the-go breakfast. You can carry it with you in a nice glass jar and eat it on your way to work or university.

Overnight Oats Variation

The basic overnight oats recipe can be adapted in different directions, depending on your liking, season and flavor cravings that special day. In todays recipe I am showing you a delicious variation of overnight oats with yoghurt and carrots. I like the carrots because I feel they fit perfectly to the fall harvest. The yoghurt just gives it a nice soft texture. If you can make these overnight oats with greek yoghurt. It has a thicker consistency which makes the taste experience even better in my opinion. 

You will see these simple overnight oats will melt your heart and give you a nice reason to wake up to delicious breakfast in the morning. 

Vegan options

So this basic oat recipe is actually perfectly suited for vegans. You can make this 100% vegan my replacing normal milk with almond/rice/oat or any other kind of alternative milk. The greek yoghurt can be substituted for coconut or soy yoghurt and it will work just as fine. You know how much I like to add protein powder to my recipes. Also here there are so many different vegan options for you. I love to use sunflower seed protein or hemp protein. Moreover, rice protein also works really nice.

Filled with complex carbs 

I love to use oats for my recipe because they are made out of a lot of complex carbs. These will slowly release energy for your body to use over a longer period of time than for example just a plain wheat breakfast roll. Oats are actually gluten-free and a great source of vitamins, minerals and antioxidants. they also have quite a high amount of fiber, which is always good for your digestion. 
Oats really are one of my favorite fitness food ingredients and I make almost all my breakfast dishes with them.

Ingredients
  1. 30g oats
  2. 100ml milk (vegans use milk alternative)
  3. 100g greek yoghurt 0% (vegans use coconut/soy yoghurt)
  4. 25g protein (vegans use rice/soy/hemp/sunflower protein)
  5. 1tbsp grated coconut
  6. 1 grated carrot
  7. 1/2 tsp cinnamon
  8. 15g Erythrit or Xylit or Honey
Instructions
  1. Mix everything together in a bowl and stir well.
  2. Put the jar into the fridge.
  3. Let soak in the fridge overnight.
