Cannelloni wie vom Italiener

Ich liebe dieses Rezept! Zucchini ist eines meiner Lieblingsgemüse Sorten. In Kombination mit Mozzarella ein absolutes Highlight. Diese Zucchini Cannelloni schmecken wie ein wahrhafter Cheat. Doch sie haben viel bessere Nährwerte als die klassischen Cannelloni mit Fleisch, vom Italiener.

Einfach und schnell zubereitet

Unsere Zucchini Cannelloni benötigen nur wenige Zutaten. Anstelle der Nudeln verwenden wir Zucchini. Den Zucchini schneiden wir in Streifen. Anschließend bestreichen wir diese mit Ricotta. In meine Zucchini Cannelloni fülle ich gerne noch eine pflanzliche Fleischalternative. Das hat den Vorteil, dass ich somit optimal meinen Eiweißbedarf decken kann. Besonders empfehlen kann ich dir vegane Cevapcici, denn diese kannst du super mit den Zucchinistreifen einrollen. Natürlich kannst du auch auf die herkömmliche Fleischvariante zurückgreifen und die kleinen Röllchen mit Hackfleisch füllen. Fleischbällchen oder Cevapcici zu verwenden ist jedoch um einiges einfacher und eignen sich optimal für diese schnelle Mahlzeit.

Anschließend benötigst du noch eine Gemüsesauce und Mozzarella. Ich verwende sehr gerne eine mediterrane Gemüsesauce von Little Lunch. Ich liebe diese Sauce sehr! Wenn es mal schnell gehen muss erspare ich mir hiermit das abschmecken und würzen. Denn die Gemüsesauce ist bereits fix fertig und kann sofort verwendet werden. Die kalorienarmen Cannelloni werden anschließend noch mit Mozzarella belegt. Danach in den Ofen gegeben. Und so schnell geht es und du hast eine leckere Mahlzeit.

Low Carb Zucchini Cannelloni mit nur wenigen Zutaten!

Zutaten

  • 1 Zucchini
  • 1 Glas Mediterrane Gemüsesauce
  • Cevapcici (oder vegane Alternative)
  • 1/2 Packung Ricotta (Eventuell auch eine vegane Alternative verwenden)
  • 1 Packung Mozzarella (Veganer Käse kann als Alternative verwendet werden)

Anleitungen

  1. Zubereitung

  2. Zucchini mit einem Gemüseschäler in Streifen schälen und zwei bis drei Streifen nebeneinander hinlegen.

  3. Mit Ricotta bestreichen und das Cevapcici darin einrollen.

  4. In eine Auflaufform geben und die mediterrane Gemüsesauce von Little Lunch darüber gießen.

  5. Nun noch mit in Streifen geschnittenen Mozzarella belegen.

  6. Bei 180 Grad Heißluft circa 30 min backen.

Dieses einfache Rezept ist auch vegan möglich. Dazu alle tierischen Produkte wie Ricotta, Mozzarella und Cevapcici durch eine vegane Alternative ersetzen. Statt Ricotta kannst du veganen Frischkäse verwenden. Auch den Mozzarella kannst du durch veganen Käse ersetzen.

So einfach geht es und du hast ein schnelles und leckeres Gericht. Diese leckere gesunde Mahlzeit wird bestimmt auch deiner Familie schmecken wird.

Healthy chocolate brownies made out of avocado! Who would have thought to put avocado in brownies? Well, if you haven’t tried it yet you should give this avocado brownies a go. Each bite is super fudgy, comforting and yummy. This recipe doesn’t use any sugar, flour or butter, which makes it a true fitness recipe! 

Avocado is a true superfood

With avocados you would probably not immediately think of brownies, but whoever will try this brilliant combination is guaranteed to become a fan of it. Avocado is usually known for its savory dishes such as salad bowls, spreads or guacamole. However, avocado is actually very neutral regarding its taste and therefore can be also used for desserts.  Avocado mousse is particularly popular, but it can also be used for decadent chocolate avocado brownies, like in my recipe. The avocado is a true super fruit and contains a lot of healthy, unsaturated fatty acids and delivers the body a good amount of energy. 

Fun fact: Did you know that the perennial avocado tree belongs to the laurel family and thus its fruits are assigned to the berries? So basically it means that the avocado is not a vegetable, as many might thing, but rather a fruit! So why not make a yummy dessert with it?

According to my research scientific research even proves the health effects of avocados. They are known to very nutritious and have a crazy amount of nutrients like vitamins, potassium and folate. Avocados are high in fiber which can help with weight loss and metabolic health. Their antioxidants are said to be able to support eye protection and last but not least I have found out that avocados can lower cholesterol and triglyceride levels in the body, which your blood levels can benefit from. If all of this is 100% true I am not an expert enough to say, but I believe that incorporating fresh fruit and veggies into your daily diet is definitely a good thing! 🙂

The inspiration for this recipe

Last year I traveled through Panama for a whole month. A country full of avocados and cocoa plantations. I wanted to implement this recipe for a long time because it simply combines both ingredients perfectly into chocolatey fitness brownies. I actually get a lot of inspiration for my healthy fitness recipes while traveling. Exploring new cultures and different cuisines always sparks my interest in new foods and I like to try new innovative recipes with local ingredients.

Avocado brownies recipe

Now let’s jump into the recipe. It is actually fairly easy. You simply mix all the wet ingredients together first and then add the dry ingredients. Regarding equipment you will need a blender and baking mold. 

Fudgy brownies with no added sugar

I always try to keep my recipes as simply as possible and this one will only take you a couple of minutes to prepare and 25 minutes in the oven. I try to make my recipes as healthy as possible and didn’t use any regular flour, butter or sugar for this one. If you like you can add an extra scoop of protein to make the macros of this recipe even better! 

The recipe is leaning towards a low carb and keto brownie recipe since we are not using traditional flour and sugar. You can make it even more low carb/keto, by exchanging the honey with Erythrit.

Zutaten

  • 1 large avocado
  • 2 tbsp eggs
  • 30 g coconut blossom sugar
  • 50 g honey
  • 1 tbsp coconut oil
  • 1 tbsp peanut butter
  • 30 g raw cocoa powder
  • 70 g almond flour
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 60 g dark chocolate

Anleitungen

  1. Preheat the oven to 180 degrees.
  2. In a bowl, stir the eggs with the coconut blossom sugar and honey until creamy.
  3. Puree the avocado together with the peanut butter using a hand blender. Now add the coconut oil and egg to the mixture.

  4. Mix together almond flour, baking powder, salt and cocoa powder in a second bowl.
  5. Now fold the dry ingredients slowly into the moist mass.
  6. Roughly chop dark chocolate and stir into the mixture.

  7. Transfer the dough into a silicone baking dish and bake at 180 degrees for 25 minutes.
  8. Only cut into pieces when the brownies have cooled down.

At best, eat the brownies as soon as possible, because they will dry out fairly quick!

Protein Joghurt Torte zum Muttertag mit Beeren auf einer Marmorplatte

Vor kurzem habe ich eine super leckere Protein Joghurt Torte gebacken. Diese wollte ich nun kurz vorm Muttertag noch mit euch teilen, da ich denke dass es die perfekte Muttertagstorte für diesen Sonntag zum Nachbacken sein könnte! 

Ich persönlich liebe es ja meiner Mutter am Muttertag eine Freude zu machen. Ich schätze es wirklich so sehr, was sie das ganze Jahr für mich macht und wie sehr sie mich immer wieder unterstützt. Bei uns ist es eigentlich schon Tradition, dass sie immer am morgen ein Bettfrühstück bekommt. Letztes Jahr habe ich ihr diesen Mugcake gemacht.  Habt ihr auch eine Muttertagstradition? Kalorien sparen am Muttertag

Das Rezept der heutigen Torte ist eigentlich von meiner Tante, ich habe es aber auf die Fitness Approved Version umgewandelt und ein paar „ungesunde“ Zutaten wie den weißen Zucker, Schlagobers und Weizenmehl ausgetauscht. 

Somit ist es nun eine leichte Torte, da sie super fettreduziert ist und auch einen niedrigen glykämischen Index hat. Statt normalen Zucker habe ich Birkenzucker verwendet. Dieser hat um 40% weniger Kalorien als herkömmlicher Zucker. Ihr könnt den Kuchen aber auch mit Erythrit machen. Hier spart ihr euch nochmal einiges an Kalorien.

Protein Joghurt Torte – das Rezept

Das Protein Tortenrezept besteht aus zwei Teilen. Einmal aus dem Boden und einmal aus der Joghurtmasse. Beginnen werdet ihr mit dem Boden, worauf dann die Beeren und das Joghurt kommen. Es ist ein wirklich einfaches Rezept und sollte nicht zu viel eurer kostbaren Zeit beanspruchen. 

Den Kuchen könnt ihr übrigens in ganz vielen Varianten machen. Ihr könnt Himbeeren, Heidelbeeren oder Erdbeeren verwenden. Andere Früchte funktionieren genauso. Somit könnt ihr die Art und den Geschmack eurer Protein Joghurt Torte immer wieder verändern.

  1. 7 ganze Eier
  2. 300g Birkenzucker
  3. 1/8 Kokosöl
  4. 3 EL Wasser
  5. 200g Dinkel-Vollkornmehl
  6. 1/2 Pkg. Backpulver
  7. 3 EL Proteinpulver Schokolade
Joghurtmasse
  1. 300g Beeren
  2. 500g Joghurt low fat
  3. 100g Birkenzucker
  4. Saft 1 Zitrone
  5. 6 Blätter Gelatine
  6. 2 EL Proteinpulver neutral oder Vanille
  7. 3 EL Wasser
Instructions
  1. Ofen auf 180 Grad Ober- und Unterhitze vorheizen. Für den Boden die Eier mit dem
  2. Birkenzucker mischen. Das Öl und Wasser zusammen mischen und unter
  3. die Eimasse rühren. Das Mehl mit dem Backpulver und Proteinpulver
  4. verrühren. In einer Springform für 30-40 Minuten backen. Danach auskühlen lassen und genau durch die Hälfte schneiden.
  5. Für die Joghurtmassen das Joghurt mit dem Birkenzucker mischen. Die Gelatine in drei EL Wasser und dem Zitronensaft erwärmen bis sie sich auflöst. Danach unter die Joghurtmasse mischen.
  6. Den halben Tortenboden wieder zurück in die Springform geben und die Beeren aufgestellt (nicht liegend) darauf setzen. Nun vorsichtig die Joghurtmasse darüber leeren.
  7. Die Torte für 2 Stunden zum Festwerden in den Kühlschrank stellen.
Notes
  1. Aus der Masse werden zwei Tortenböden hervorgehen. Den zweiten einfach einfrieren, so könnt ihr ihn bei der nächsten Torte gleich wieder verwenden.

The ultimate healthy chocolate chip cookie skillet

How does a giant healthy chocolate chip cookie sound to you? Skip the greasy butter and carb loaded flour and replace it with extra protein and healthy applesauce instead. Once you have tried this low sugar,  fudgy, goey and warm piece of deliciousness you won’t go back to regular cookies. 

What makes this protein cookie skillet so healthy?

This healthy chocolate chip cookie contains no sugar or conventional butter. Two ingredients you usually always find in any traditional cookie recipe, adding so many extra calories to the dessert. I made my low calorie chocolate chip cookie with applesauce. Like this you keep the cookie soft and moist without having to add butter or oil. Instead of regular butter I used almond butter, which is also a great vegan alternative. Also, I replaced the sugar with date syrup, providing you with more complex carbs and less fast acting sugars. The date syrup adds this wonderful caramel aroma to the cookie – simply mouth watering!

I made this fitness cookie in my grandmas skillet pan. The recipe is absolutely perfect for some kind of small pan. Don’t just put the dough on a baking sheet, but rather in some kind of mold, pan or casserole. Check here for a skillet pan I can recommend. 

The recipe itself is fairly straight forward and simple. You basically mix the wet ingredients together first and then add the dry ones. It’s as simple as that. Then you put everything in a skillet pan and bake it in the oven.

Recipe alternatives for a no sugar cookie

Instead of conventional flour you can also use almond flour for my healthy protein cookies. Almond flour has a lot of healthy fats and is much lower in calories than regular flour. If you want to save extra carbs you can use this as a substitute to even more pimp the macros of this recipe! Instead of making healthy chocolate chip cookies with applesauce you could make the with bananas. As I mentioned earlier this adds moisturizer to the recipe and keeps it soft. To make it even more fudgy you might want to add a big of coconut oil to the recipe. But that is up to you! A simple way to make healthy vegan chocolate chip cookies is simply by adding vegan protein powder instead of whey! Check out my friend @vegamelon for her vegan version of the recipe.

Toppings for low calorie cookies

I love to top this protein chocolate chip cookie skillet with a small scoop of vanilla ice cream. 100g of vanilla ice creams have 138kcal. Additional you can top it with fresh berries. Strawberries and blueberries work especially well with this cookie. Nut and nut butter also work great as a topping. Just be aware of a lot of extra calories when adding these topping options, since they are very calorie intensive. 

If you want to make a pure protein version out of this healthy dessert you might want to mix some whey with greek yoghurt and add that together with some fresh fruit onto the cookie. For a low calorie option you can also use sugar free syrup as a topping or sugar free fruit jam or simply eat the cookie bare and naked as it is.

  1. 25g Protein Powder (vegan or whey - I recommend Caramel or Vanilla flavor)
  2. 100g date syrup
  3. 100g apple sauce
  4. 70g almond butter
  5. 40g spelt flour

Instructions

Kekse ohne Zucker – weihnachtliches Protein Lebkuchen Rezept

Kekse ohne Zucker - gesunder Lebkuchen

 Kekse ohne Zucker sind ja gerade in der Weihnachtszeit selten gesehen. Hier vergisst man schnell alle Regeln der gesunde Ernährung und lässt sich von Vanillekipferln und Linzeraugen verführen. Nicht so mit diesem Rezept. Mein Protein Lebkuchen ist ohne Butter und ohne Zucker und spart euch einiges an Kalorien!

Zuckerfreie Kekse – keine Butter, kein Zucker, extra Protein

Protein Lebkuchen 

Solltet ihr mir schon länger folgen kennt ihr bestimmt meinen Hang zu Proteinpulver. Ich liebe es einfach und verwende es super gerne beim Backen und kochen. Ihr habt dabei auf anhieb bessere Nährwerte bei jedem Rezept, spart euch Kohlenhydrate und Zucker. 
Für Lebkuchen und Weihnachtskekse hatte ich es allerdings noch nicht verwendet. Das Rezept ist wirklich super spontan in der Küche entstanden. Da ich gerade hier in Mexiko bin und die Tradition des Lebkuchen es nicht bis hierher geschafft hatte und ich unbedingt Plätzchen ausstechen wollte kam ich auf die Idee ihn einfach selber zu machen – Protein style selbstverständlich. Meine gesunden Kekse ohne Zucker werden euch beeindrucken, soviel kann ich versprechen! 

Da ich unbedingt kleine Lebkuchenmänner backen wollte als Deko für meine anderen Rezepte musste die Konsistenz vom Teig stimmen um ihn auch ausrollen zu können, was auch super gut geklappt hat. Meine Plätzchen ohne Zucker sind zum Ausstechen richtig gut geeignet. Ich war wirklich verblüfft wie sehr der Teig einer echten Lebkuchenmasse ähnelte!

Fit durch die Weihnachtszeit

Wo man in der Weihnachtszeit auch hingeht, gefühlt werden einem überall frisch gebackene Plätzchen angeboten, nicht wahr? Am schlimmsten sind die Vorweihnachtsbesuche bei meiner Oma, die mit Leidenschaft gerne 20 verschiedene Keksorten bäckt. Hier ist es einfach super schwierig zu widerstehen und die Summe der Kalorien schlägt sich dann immer recht schnell auf mein Gewicht nieder. Wisst ihr dass die meisten Weihnachtskekse eigentlich nur aus Butter, Zucker und Mehl bestehen? Drei Zutaten dich ich IMMER versuche in allen meinen Rezepten zu vermeiden. 

Kekse ohne Zucker - gesunder Lebkuchen

Man kann es fast nicht glauben aber ein Vanillekipferl hat ganze 97kcal. Und wie schnell hat man da fünf Stück sich in den Mund gesteckt?! 
Meine gesunden Kekse ohne Zucker haben gerade mal die Hälfte davon! 

Heute möchte ich euch ein Rezept zeigen, welches viel besser für euch ist als der herkömmliche Keksteig! Butter und Zucker habe ich weggelassen. Mehl musste ich für die Konsistenz aber trotzdem verwenden. Dafür aber Vollkorndinkelmehl! 

Das Schöne an dem Rezept ist auch, dass ihr wirklich nicht viele Zutaten benötigt und das meiste bestimmt schon in eurer Küche habt. Vielleicht neu kann für euch das Erythrit sein. Ich verwende das total gerne als Zuckerersatz. Es ist ein natürlicher Zuckeralkohol ohne Kalorien und man kann es total easy online bestellen. Falls ihr das nicht zu Hause habt oder euch kaufen wollt kann ich Xylit empfehlen. Das ist auch als Birkenzucker bekannt und hat um 40% weniger Kalorien als herkömmlicher Zucker. 

Statt der Butter habe ich Erdnussmus genommen. Dieses enthält einen hohen Anteil an ungesättigten Fettsäuren, welche ganz wichtig für euren Körper sind. Außerdem liebe ich einfach den leckeren Geschmack und brauche keine Butter verwenden!

Das Rezept – weihnachtliche Kekse ohne Zucker

Hier nun das Rezept zu meinen leckeren Keksen ohne Zucker für die Weihnachtszeit:

Ingredients
  1. 60g Erdnussbutter
  2. 1 Ei
  3. 2 EL Kokosflocken
  4. 25g Proteinpulver (Schokolade, Vanille, Karamell)
  5. 1 TL Rohkakaopulver 
20g Birkengold Xylit
  6. 1 TL Lebkuchengewürz
  7. 5 EL Dinkelmehl 
1 TL Backpulver
Instructions
  1. Zuerst das Ei mit der Erdnussbutter mit einem Pürierstab fein mixen.
  2. Kokosflocken, Backpulver, Proteinpulver, Kakaopulver, Xylit und Lebkuchengewürz dazumischen und verrühren. Nun das Mehl dazugeben und mit den Händen die Masse kneten.
  3. Es sollte ein fester Teig den man gut ausrollen kann entstehen. Sollte er noch zu flüssig sein einfach immer mehr Mehl dazugeben bis er sich gut ausrollen lässt.
  4. Etwas Mehl auf einer Arbeitsplatte verteilen und den Teig 5mm dick ausrollen.
  5. Kekse ausstechen und die Oberfläche mit einem verquirlten Ei bestreichen damit das Keks dann schön glänzt.
  6. Bei 180 Grad 10-15 Minuten backen.
  7. Gut auskühlen lassen und bei Bedarf noch verzieren.
Notes
  1. Als gesundes Icing könnt ihr Magertopfen mit etwas Proteinpulver mischen und zum Verzieren verwenden!

Could there be anything better than protein Rafaellos? I personally love those little coconut treats and that is why I wanted to create a super clean version of them. Let me share this delicious protein Rafaello recipe with you today and I am sure you will fall in love with it as well. It is low carb as well as keto approved!

The inspiration for this protein Rafaello recipe

This was actually one of the first fitness recipes I ever developed about 4 years ago. When I started to eat clean I was looking for clean ways to still satisfy my sweet tooth and thats when I came up with this delicious and incredible protein Rafaello recipe . 

It is super easy – as most of my recipes are – you only need a couple very basic ingredients. This means the recipe doesn’t require you to cook or bake anything. Literally anyone can do it within 15 minutes. 

The cute little protein balls are also perfect for decoration other dishes. Here some examples of my bowls and parfaits where I used them to really make the dish pop.

Other uses for the protein rafaellos

Once you have made the little cute and delicious protein rafaellos there are many different ways of including them in your recipes. This is a chia coconut overnight oats bowl. Heavenly right? Here is another creation of a coconut parfait I made with the cute little protein balls:

The perfect party snack 

Once you make these the first time I promise you you will fall in love with them. This protein Rafaello recipe is so genius I should actually get a price for it 😀 No seriously – if you are ever only going to make one of my recipes then make this one!  

I often make this protein Rafaello recipe when I have friends over. It is the perfect snack to put in the middle of the table for everyone. Usually most people cannot believe it is super healthy and doesn’t contain any sugar, butter or flour! 

One ball has only 1.9 net carbs, which is absolutely amazing. One protein Rafaello will have about 46kcal, which makes it a way better snack than a regular sugar cookie. You will be able to make about 15 pieces out of this recipe. Store them in the fridge for up to 3 days.

Ingredients
  1. 30g coconut or vanilla whey protein
  2. 250g low fat cream cheese
  3. 40g coconut flour
  4. 20g Xylit or Erythrit
  5. 20g coconut flakes
  6. 15 almonds for the filling
Instructions
  1. Take a big bowl and mix the whey protein with the cream cheese, coconut flour, sweetener of choice and half of the coconut flakes. You should get a sticky and quite stiff mixture.
  2. Take a small little bowl and pour the rest of the coconut flakes in it.
  3. Now with a spoon take a good amount of dough into your hands and roll into a little ball.
  4. Stick the almond in the middle and roll until smooth.
  5. Put the little protein ball into the coconut flakes and make sure to cover the entire ball with them.
Notes
  1. The protein balls will harden a bit if you put them into the freezer.

Feigenporridge mit AdeZ Amazing Almond

Wo sind meine Porridge Liebhaber? Heute möchte ich euch meinen super leckeren Feigenporridge zeigen, den ihr ganz leicht zu Hause nachmachen könnt. 

Bevor wir beginnen möchte ich euch erzählen wie ich zu diesem Rezept gekommen bin. 

AdeZ Blogger Brunch 

Anfang August hat AdeZ einen Blogger Brunch in einem Fitnessstudio organisiert. Hier lag der Fokus auf veganer Ernährung, Fitness und Nachhaltigkeit. 
Begonnen hat der Workshop mit einer Yogastunde. Danach gab es einen Ernährungsworkshop bei welchem wir die Einzelheiten einer pflanzenbasierten Ernährung uns angesehen haben. Zum Abschluss gab es dann noch ein Fingerfood Buffet und die leckeren Drinks von AdeZ. 

Welterschöpfungstag

Im Zuge des Ernährungsworkshops habe ich dann von dem Welterschöpfungstag erfahren. Dieser war am 1. August in diesem Jahr. Der Welterschöpfungstag markiert den Tag an welchem wir die Resourcen der Erde für das bestehende Jahr aufgebraucht haben. Also mehr als die Erde bis zum Ende des Jahres wieder nachproduzieren kann. Im Moment brauchen wir beinahe 1.7 Planeten. 

Das zu hören hat mich tief betroffen. Wir zerstören uns den Planeten selbst. Das Streben nach immer mehr wird uns irgendwann einholen. Ich habe dann auch erfahren, dass die Fleisch- und Milchproduktion einen großen Anteil an der schlechten Gesundheit unserer Erde hat. 

Ich dachte mir dann ich möchte hier einfach etwas unternehmen um das Datum nach hinten zu verschieben. #MOVETHEDAY

Wisst ihr, dass wenn wir den globalen Fleischkonsum allein um 50% reduzieren und diese Kalorien durch eine vegetarische Ernährung ersetzen würden, würden wir den Overshoot Day schon um ganze 5 Tage verschieben.

Deshalb habe ich mich dazu entschieden die Bewegung #VEGANMONDAYS ins Leben zu rufen

#VEGANMONDAYS

Seit August ernähre ich mich also jeden Montag vegan. Somit kann ich auch meinen, auch wenn nur kleinen Teil, für eine gesündere Erde beitragen. 
Ich habe dies auf meinem Instagram kommuniziert und mittlerweile nehmen jede Woche schon ganz viele meiner Follower an dem Movement teil und markieren mich in ihren Stories und Posts, in welchen sie mir ihre veganen Köstlichkeiten zeigen. 
Ganz vegan zu gehen ist für mich im Moment noch nicht vorstellbar, da ich Fleisch schon gerne esse. Jedoch habe ich mich fest entschlossen Fleisch- und Milchprodukte ab jetzt viel bewusster zu genießen und auch immer nach der Herkunft dieser Produkte zu fragen. 

Wenn ihr nun auch Lust bekommen habt, dann versucht doch auch einmal einen Tag vegan zu essen. Ihr werdet sehen, es ist gar nicht so schwer! 

Rezepte mit AdeZ

Aus dieser Motivation heraus ist nun auch dieser Feigenporridge entstanden. Es war mal wieder ein Montag und ich wollte trotzdem meinen leckeren Frühstückshaferbrei essen. 
Hier muss ich gestehen sind die alternativen Pflanzendrinks von AdeZ wirklich perfekt. Die Drinks sind nämlich komplett vegan, ohne zugesetzten Zucker, schmecken aber trotzdem durch das natürliche Stevia leicht süß! 

Was ich auch noch kurz herausheben möchte ist die Flasche in der die alternativen Pflanzendrinks kommen.  Ich stehe ja Plastikflaschen unglaublich kritisch gegenüber und setze im Moment alles daran meinen eigenen Plastikmüll so gut es geht zu reduzieren. Die Flasche von AdeZ ist eine PlantBottleTM. Sie besteht bis zu 30% aus pflanzlichem Material und ist zu 100% recyclebar! Die PlantBottleTM ist umweltfreundlicher als Tetrapack. Perfekt also um mich bei meinem Vorhaben den Welterschöpfungstag nach hinten zu verschieben zu unterstützen. 

Amazing Almond

Für den leckeren Feigenporridge habe ich  AdeZ Amazing Almond verwendet. Dieser Geschmack begeistert mich besonders. Ich liebe die süßliche Note der fein gemahlenen Mandeln und mag wie cremig dieser Drink ist. Außerdem, bin ich der Meinung, dass er sich deshalb so gut für süße Frühstücksrezepte eignet.

Zubereitung Feigenporridge

Zutaten:

150ml AdeZ Amazing Almond  
30g Hafermark
20g Xylit 
1 Brise Zimt
25 g veganes Proteinpulver (optional)
2 Feigen
1/2 Banane
15g Walnüsse
1 EL Maple oder Dattel Sirup
15g Frühstückgranola

Zubereitung:
In einem Topf den Hafer unter ständigem Rühren in dem AdeZ Drink aufkochen.
Xylit, Proteinpulver (optional) und Zimt hinzu geben. Umrühren, bis alles gut vermischt ist. Porridge in eine Schüssel füllen. Banane schneiden und auf den Porridge legen. Erdnussbutter über den Porridge geben und noch mit dem Granola, Maple Sirup, Feigen und Nüssen dekorieren.

Schlussendlich noch warm genießen und einfach schmecken lassen!

Overnight Oats with Carrots

Overnight oats – the perfect, easy and super quick breakfast recipe for a healthy start into the day! 

On-the-go breakfast 

What I love about these healthy overnight oats is that you can prepare them already the day before and simply need to take them out of the fridge the next morning and off you go. That is why this recipe is perfect for an on-the-go breakfast. You can carry it with you in a nice glass jar and eat it on your way to work or university.

Overnight Oats Variation

The basic overnight oats recipe can be adapted in different directions, depending on your liking, season and flavor cravings that special day. In todays recipe I am showing you a delicious variation of overnight oats with yoghurt and carrots. I like the carrots because I feel they fit perfectly to the fall harvest. The yoghurt just gives it a nice soft texture. If you can make these overnight oats with greek yoghurt. It has a thicker consistency which makes the taste experience even better in my opinion. 

You will see these simple overnight oats will melt your heart and give you a nice reason to wake up to delicious breakfast in the morning. 

Vegan options

So this basic oat recipe is actually perfectly suited for vegans. You can make this 100% vegan my replacing normal milk with almond/rice/oat or any other kind of alternative milk. The greek yoghurt can be substituted for coconut or soy yoghurt and it will work just as fine. You know how much I like to add protein powder to my recipes. Also here there are so many different vegan options for you. I love to use sunflower seed protein or hemp protein. Moreover, rice protein also works really nice.

Filled with complex carbs 

I love to use oats for my recipe because they are made out of a lot of complex carbs. These will slowly release energy for your body to use over a longer period of time than for example just a plain wheat breakfast roll. Oats are actually gluten-free and a great source of vitamins, minerals and antioxidants. they also have quite a high amount of fiber, which is always good for your digestion. 
Oats really are one of my favorite fitness food ingredients and I make almost all my breakfast dishes with them.

Ingredients
  1. 30g oats
  2. 100ml milk (vegans use milk alternative)
  3. 100g greek yoghurt 0% (vegans use coconut/soy yoghurt)
  4. 25g protein (vegans use rice/soy/hemp/sunflower protein)
  5. 1tbsp grated coconut
  6. 1 grated carrot
  7. 1/2 tsp cinnamon
  8. 15g Erythrit or Xylit or Honey
Instructions
  1. Mix everything together in a bowl and stir well.
  2. Put the jar into the fridge.
  3. Let soak in the fridge overnight.

Kürbispfannkuchen – gesund und lecker

Kürbispfannkuchen

Gerade in der Herbstzeit koche ich wahnsinnig gerne mit Kürbis. Kürbis ist ein wahrer Alleskönner. Ob salzige oder süße Speisen – man kann einfach so viel damit machen. Aus diesem Grund möchte ich euch heute eines meiner leckersten Herbstrezepte zeigen: Kürbispfannkuchen – lecker, gesund und vollgepackt mit Protein und guten Kohlenhydraten. 

Da ja auch bald Halloween vor der Tür steht wollte ich noch ein paar passende Rezepte dazu kreieren um euch ein paar Ideen für ein leckeres Gruselfrühstück zu geben!

Pancakes sind ja wirklich immer eine leckere Frühstücksoption. Wenn man sie noch mit Kürbis aufpept werden sie nochmal besser. 

Ist Kürbis Obst oder Gemüse?

Habt ihr gewusst, dass Kürbis gar kein Gemüse ist? Kürbis zählt nämlich eigentlich zu Fruchtgemüse. Zusammen mit Paprika, Tomaten, Zucchini, Auberginen und Gurken gehören sie also dem Obst an. Deshalb kann man Kürbis auch auf so viele unterschiedliche Arten verwenden. Ich persönlich liebe ja Kürbis und verwende diese „Frucht“ im Herbst in fast allen meinen Rezepten. Egal ob bei einem leckeren Curry Abendessen oder bei einem süßen Pumpkin Latte als Drink.

Ingredients
  1. 1 Banane
  2. 20g Proteinpulver (optional)
  3. 150g Kürbis (ich nehme am liebsten Hokaido oder Muscat)
  4. 2 Eier
  5. 60g Haferflocken
  6. 50 Kokosmilch
  7. 100ml Milch oder MIlchalternative
  8. 1 Brise Zimt
Instructions
  1. Den Kürbis waschen, klein schneiden und in einem Topf mit Wasser weich kochen. Danach einfach alles zusammen in den Mixer packen und fein pürieren.
  2. Eine Pfanne mit etwas Butter bestreichen und mittelgroße Pfannkuchen heraus backen. Mit Toppings eurer Wahl belegen.

Okay I just need to say it again: I ADORE PUMPKIN! Literally these days everything I eat contains pumpkin. So why not also my drink? Let me show you in this recipe how you can make a delicious pumpkin spice latte for yourself.

So, since I don’t really drink coffee I am always looking for other yummy alternatives that I can enjoy in the morning. Usually I drink tea, but in the fall pumpkin is just way too yummy to not make a delicious, creamy drink with it. That is why I came up with my own favorite pumpkin spice latte recipe. 

You know what really surprises me? They also have a ton of pumpkin here in Costa Rica. I have seen everything from a Hokaido pumpkin to Muscat to butternut squash! So happy about this because it means I don’t have to miss out on more awesome fall food the next weeks!

Pumpkin Spice Latte

Regarding your choice of protein you can either make this low carb pumpkin spice latte totally vegan by using rice/pea or sunflower protein. Of course you can also use whey protein. Here I recommend the flavors cookies & cream as well as plain vanilla. 

Did you know that a cup of a Starbucks pumpkin spice latte has almost 500kcal? This recipe isdefinitely a healthier alternative!

The recipe

So for this special pumpkin photoshoot I made a super fancy dark chocolate decoration around the jar. You don’t need that though really. I just thought it looks cool 🙂

Ingredients
  1. 200ml almond drink
  2. 50g pumpkin puree
  3. 1/2 tsp pumpkin spice
  4. 1 tbsp protein powder
  5. 20g Xylit
  6. 40g dark chocolate if you want the jar decoration
  7. Optional: low fat whipped cream for topping
Instructions
  1. If you want the beautiful jar decoration, melt the chocolate in a water bath.
  2. With a spoon, run the chocolate down the rim of the glass.
  3. Then put the fridge.
  4. Mix almond milk with pumpkin puree in a saucepan over low heat.
  5. Stir in pumpkin spice, protein and Xylit.
  6. Pour pumpkin beverage into the chocolate glass.
Notes
  1. If you want you can top the drink with low fat whipped cream.
